Carole, I have made mashed potatoes with cabbage (colcannon) but never thought about combining them in a skillet.

Wally, It’s good that you are going to Costco with your neighbor. Your last statement is so true. Hugs.

We had rain all day and some people here lost power due to one utility company’s outages at the coast. More rain tomorrow.

Dinner was shrimp newburg on fettuccine with asparagus.

  • Hugs, Wally.

We had a lovely day yesterday. Sunshine and a comfortable high temperature. The campground is beautiful with the fall colors, mainly gold. DH used the tractor to relocate a man's storage building to a different site. At the end of the season, when one site comes open because a renter is not returning, some people relocate their campers to a different site for next summer. Each site is different.

I have been ready to go home for a couple of weeks. Finally, dh has committed to leaving at the end of this week. I don't enjoy the transition at either end. Leaving. Arriving. Settling in. Enough complaining.

Dinner was pork chops, left over mac and cheese, and a salad with lettuce and tomato, blue cheese and onion for dh.

Thank you, ladies, for being so gentle and kind…and apologies if I whine too much about missing DH.

I made a weird dinner that turned out good; ground pork, onions, tomatoes, spinach and elbow macaroni. I made waaaay too much. Ugh…I'll have to freeze some today or tomorrow.

Safe travels, Carole. The older I get, the less I like altering my routine. Packing up is a huge routine change.

just keep putting one foot in front of the other Wally and whine as much as you need to.

Sun is finally out today. A welcome sight . Cool overnight temps though. The plants that are outdoors will be protesting soon. I don’t look forward to that chore of bringing them back in.

I think tonight is fajitas I have peppers that need using. Don’t know what the side will be.

For my hubby, another night of cube steaks. For me….nothing!

Wally. 33 years should not be erased. And I agree with Auntie about "one foot in front of the other and 'whine' as needed".

We, too, are packing, but not for a season…just a couple of weeks in the camper. We had considered flying and having the lady down the road, that normally takes care of our dogs, is out of town for her sister's wedding that is on the same day as DD's wedding. So we are driving back to Detroit in the truck camper and the dogs will be with us. It will be a bit crowded with a 40 and 60 pound dog, but that's okay. :-)

Eric good for those “two dog nights lol!

"New dog" (60+ pounds and 2-1'/2 years old) can easily jump up into the overhead sleeping space in the camper. "Old dog" (40 pounds and 16+ years old) until about 2 years ago could get up there. He's getting old. :-(

And at the moment, "new dog" has the "zoomies".

A flash flood watch has been posted for this area. Some places are expected to get about 2 inches of rain, so very likely the road into town will have flowing water across it in several places. The road clears in a few hours so it's usually only a minor annoyance. The exceptions are if one is stuck on the wrong side while trying to get home or one has an appointment. Then it's more of a major annoyance. :-)

We were in Show Low to pick up the trousers I'll be wearing at the wedding after being hemmed. While in the area we ate a late lunch, so dinner may be "nothing" as neither of us are (currently) hungry.

Wally, We’re here to listen to whatever you need to say.

Carole, Packing for a big move is such a pain.

Eric, Your trip to Detroit will be more interesting with the dogs accompanying you.

The trees here have just started to turn. A sugar maple behind our yard is always the first to change color. It is bright red and pink so this might be a good foliage year.

Dinner tonight was oven baked chicken along with a skillet dish of potatoes, cabbage and onions (thanks, Carole.). The recipe called for Cavender’s spice which I have only seen in Arkansas so I just added spices used in Greek cuisine.

  • Wow. I'm a food influencer. LOL.

I totally agree with Nance. We're here to listen and empathize, Wally. I think you're doing "as well as can be expected."

I enjoyed our Betty Crocker dinner last night. I used the Roast function on the convection/microwave oven to cook two chicken thighs in cream of chicken soup. The soup created a gravy for an herb stuffing. We both love stuffing.

Enjoy your trip, Eric, and congratulations to your DD.

A rainy day here with mild temperatures and no wind. I heard on the Valley News that some areas had gotten 5 to 8 inches of rain during the night. During the summer, farmers were desperate for rain.

Eric, I hope the trip and wedding will be wonderful.

Ended up with a bowl of cereal with berries for supper last night. Did not feel up to cooking. Maybe today will have energy to get in there again and fix dinner again. Just doing dishes and making the bed and doing some dusting wore me out already.

Thin sliced chicken breasts, chicken flavored 90 second rice and green beans.

The rain stopped this morning. It’s supposed to be in the 80s by Friday. As they say, if you don’t like the weather in New England just wait a few minutes.

Dinner tonight was spinach and ricotta ravioli in bolognese sauce.

Carole - answering your question from another thread. Houston is finally down to mid 90's during the day - 93 today. I'm still waiting for it to drop at night - 73 last night.

Sorry I've been remiss at posting but I have been reading daily. Thanks to everyone for dropping in regularly. I still miss Special K but never did hear back from my email. Hope she is OK.

My son is coming in from CA tomorrow. He will take me to the doc on Thursday ( supposedly because of remaining hurricane storms), spend Friday with his Dad (my ex) since his wife has been in the hospital 3 of the last 6 weeks, and then drive me to Stockdale for the funeral of my brother-in-law Saturday (4 hours) Since it involves scattering ashes, the weather could be problematic. I didn't care for BIL since he cheated on my SIL in law before she died, but I REALLY care for my niece & nephew. DS and I will spend Saturday night in Seguin - on I-10. Then Sunday he will drive us back and do some honey-dos for me before heading home Monday morning.

Meal wise - I thought he might like steak because he lives with a vegetarian - but no. He wants Laurie's Salsa Chicken for at least two meals. (a man who likes leftovers!!!) Will also make black eyed peas with ground pork, spices, Rotel, etc; and I picked up a small marinated pork loin. We will eat at Escalante at least once since he really misses good local beef enchiladas. There is a restaurant close by where he likes to go every morning for their breakfast tacos.

still haven't vacuumed or dusted but I did get to the grocery store and got sheets on his bed.

  • I'm worried about SpecialK. I wish she would check in and let us know she's ok.

Minus, I know you will enjoy the time with your son.

Dinner last night was baby back ribs, finished on the grill with barbecue sauce. They were perfectly cooked and delicious. The side (a strange pairing!) was the leftover stuffing.

The freezer is looking empty. Tonight we will meet our Park Rapids friends, Judy and Ron, at Good Life cafe in town. We haven't been there in quite a while, and it has great sandwiches. I'm thinking about having a Reuben.

I haven't seen Ellimae(sp?) post either….I've been thinking about both ladies.

I hope today will be the last of my leftovers…need to re-learn how to cook for one.

Minus, enjoy your son's visit. Ha, I haven't vacuumed since my DH's last year of cancer….ugh. I did swiffer, but that only does so much.

Wally, If you are thinking about elimar she still posts on the Middle Aged Memories thread.

Minus, Enjoy your son's visit. It sounds like it will be very busy. Laurie's Salsa Chicken is definitely his favorite dinner.. He can get a steak almost anywhere but you’re the only one who will make that meal.

Carole, Since you love stuffing it goes well with everything. Good timing on clearing out the freezer.

Dinner tonight was salsa verde chicken enchilada casserole.

Dinner at Good Life Cafe was good. I had fish and chips. The walleye was delicious and so was the house made tartar sauce and the fries. DH helped me eat the fries. He had a cup of beef chili and half a BLT sandwich. The company was enjoyable. Our final outing with Judy and Ron.

Maggie, Illimae is who I've been thinking about. I'm not sure who the person you mentioned…

Finally finished my leftovers. Whew….no idea what to make today.

Happy october 1st. Hopeful my septic inspection goes well today….

Wally, About six months ago Illimae wrote that she wasn’t posting since the omeprazole which she has to take was causing lack of appetite. She logged in a couple of days ago so she is still around. I miss her fabulous photos of the meals she made. I hope the septic inspection went well. You did a great deal of yard work to get ready for it.

Carole, I have never had fish and chips made with walleye. I guess the fish used depends on what the local varieties are.

Dinner tonight was pad Thai takeout.

Walleye is very popular up here in the Northern Great Lakes region.

Maggie, thank you for that information ❤️

I made a "salmon salad" (similar to tuna salad but used canned sockeye), added chickpeas and put it on a bed of arugula.

Septic inspection went OK…not sure if this is just a money trap, but required. Need to have it pumped as DH seems to have skipped that…such mixed feelings on doing all these things alone…angry he missed things, scared I'm doing things wrong, frustrated houses require so much maintenance….whine, whine, whine.

Wally home ownership is definitely not always what it’s cracked up to be. We had to get our septic pumped at our old house . Fortunately, it was just a case of calling the guy then paying the guy.
safe travels for you and your DH Carol.

tonight is pizza night but I’m not sure we’re in the mood yet so it’s to be determined as to what dinner will be. Maybe pasta.

It's the $1,000 that is adding to the ick.

I have a commercial driver license with an endorsement to drive heavy vehicles with (liquid) tanks. I had to use the driving license for an ID and was asked if I wanted a job pumping septic tanks and driving the trucks. "Ahh…no…I'm retired. :-)

Next May, unless needed before then, I'm calling the septic tank service folks to pump the tanks. At that point it will be five years and that was the time interval my parents used. Here, the cost is supposedly around $600, but that may be a "$600 plus many extra fees".

Yes, it is an "ick" job and definitely a S—- job. :-) But it is certainly needed.

MIL is back at the assisted living place. It took nearly all day, but she is glad to be "home" and we are also glad.

Tuesday we start the drive to Detroit so Sunday and Monday will be devoted to getting the camper packed.

I had baked and pan fried walleye when I lived in MI but must have skipped the fish and chips there. Both sides of the north Atlantic use cod and haddock. DH won’t risk fish and chips in FL since it’s likely to be some other fish variety.

Carole, Have a safe journey home.

Eric, Good to hear your MIL made it back to her assisted living home. Driving to the wedding with the dogs makes packing more complicated.

I got home from Boston late since the IR clinic was running hours behind schedule. The fellow on duty today seemed to be doing injections for the first time (under the supervision of an experienced IR.) It took three tries, commandeering the newest US machine and me piping up that the doc’s directions were related to using the xyz axis in algebra class before he successfully reached the bursa sac. Last time the IR fellow was an orthopedic surgeon who did it in a flash since he had done hip replacements as a resident. I guess it all averages out.

Dinner tonight was leftover cube steak for DH and leftover chicken enchilada casserole for me.

Dinner last night was a ribeye and baked potato. The ribeye was perfectly cooked on the grill.

Tonight we're taking the owners and their daughter to dinner at nearby Clancy's. Actually we're meeting them there. It was dh's suggestion. No cooking and cleaning.

I got a lot accomplished yesterday, including emptying the cabinets in the galley and cleaning the refrigerator. The weather was sunny and cool. Today we'll try to finish up except for the last minute details like pumping antifreeze into the pipes.

There will be major changes next summer which have been hinted at but not fully explained. The owners' son and his wife and two of their children will be living in the large house. The older owners are renovating the two condos, combining them into a smaller home for themselves. Hugh, the guy who has been renting one of the condos for 9 years, is devastated at losing his home. Sandy, the woman who rented the other condo, is gone quite a lot, but she was shocked and sad, too. Three sites that will be empty apparently will not be filled with new renters. DH guesses that they will be guest sites for family with rvs. The younger female owner has a large family that has big get togethers. I guess we'll see if we're healthy enough to return next summer. We have been assured that there will be no changes with our site and Mary and Lyman's site.
