    Debbie,



    Here's a repost of the Cream of Chicken soup....



    "I mostly follow this recipe.... http://www.foodnetwork.com/recipes/food-network-kitchens/cream-of-chicken-soup-recipe/index.html... For the cooked chicken I baked 4 boneless chicken breasts, seasoned with salt and pepper for roughly 30min at 350 degrees and then cut it into bite sized pieces..... But I was doubling the recipe... So maybe 2 breasts for a single recipe... You could also add more vegetables as you see fit!



    I did think my broth might not have been quite up to par so added a generous tablespoon of Better Than Bouillion paste (available in the grocery soup aisle with the bouillion cubes)..... Also sprinkled just a ponch of poultry seasoning...



    Also.... I boil up some noodles of the thick and hearty style on the side and stir them into the soup right before serving.... You don't need a ton but just enough to make it a stick to your ribs kind of dinner!"

    Easy drive to and from rads tonight.  That 6 p.m. time is pretty good, and again they took me within five minutes of my arrival.  We stopped on the way home and ate at The Weathervane, a local seafood chain...kinda like Red Lobster without the yummy cheddar biscuits.  The food was OK, but when did it become so darn hard to get a good baked potato in a restaurant?  The first one came out barely lukewarm and seeminly microwaved.  I sent it back because it wasn't hot enough to melt the butter or sour cream.  The second one came out like a real baked potato - crispy skin and all.  I swear they couldn't possibly have come out of the same kitchen!  I had grilled swordfish, was just ok but it was something different.  I love it when it's nice and fresh, this one was seriously overcooked.  Oh well...

    My oldest DS is driving tomorrow night, and his birthday is Friday.  I think we'll take him to a local Japanese steakhouse when we get back.  I'm pretty sure he likes it as long as they don't give him any mushrooms! 

    Not a whole lot of cooking going on in my kitchen!  But I did open all the Amazon boxes today and took an inventory of what I've ordered, what's arrived and who I've missed on my list.

    Seaside- Thanks for the recipe it sounds so yummy will try it next week.

    Michelle- Sorry your dinner was not very good,  I have seen restaurants where they cook the potato and let it sit in a steamer which really isn't very warm, I'm with you, I want my butter and sour cream to melt and my potato hot! 

    I wish my day would of ended as good as it started but it unfortunately it did not. We drove the 2 hours this morning to go to portland, had lunch with our friends, then they wanted to show us there home which was beautiful, about 7ooo, sq ft. it was 4 story's and had an elevator which I took, wasn't about to climb all those stairs LOL!- Dh had a meeting then went to the Star cruize on the river all the boats were lit up, it was beautiful. dinner was excellent, had fresh salmon and the veggies were coooked to perfection. It was in the low 20's when we left and icy, we were walking down a steep metal ramp when I went down hard, twisted and sprained my ankle and bloodied up my knee, the nurse they had on board was there in literaly seconds, she wrapped my ankle up and bandaged my knee, and drove me to my car in her golf cart, I was in so much pain so  we didn't spend the night there as originally planned, and drove home in foggy icy conditions. I'm hoping it's just sprained, can't move my toes and im in a lot of pain, just took a pain pill, but wanted to whine before i went to bed LOL!

    Debbie - ouch!  I agree with Joyce - get that xray and make sure it's nothing too serious, or you may be in pain for months! 

    Joyce - I can't believe they golfed yesterday, it wasn't all that warm! 

    Ugh, I woke up at 4:30 and couldn't get back to sleep.  I finally crawled out of bed at 6:00 and made coffee.  I thought rads were going to wipe me out but maybe it's too soon to notice anything.  I'll sleep tonight - chemically induced, but sleep nonetheless!

    Oh Debbie that sounds so painful!  Hope all is ok.  that stinks for your weekend. Prayers for fast healing.

    Have to check in on the football...I am also a huge fan.  My first love of course is soccer because my two kids played throughout highschool...I even like to watch it if its in Italian or a language I dont understand...I still know whats going on.

    Came home from seeing my mom last evening around 6 and had to come up with a quick meal, I was starving, so had italian sausage sand with peppers and oins and roasted red pepper soup out of a box...stange combo.  Going to see my mom every day is taking a toll on all of us, so today we are taking a break.  My dad was so tired and kinda loopy yesterday, so we decided he needed to stay home and rest.  She is still in ICU because they cant get her heart rate regulated, other wise she is fine, walking, eating, and ready to get the heck outta there.

    Laurie, hope your little one is on the mend and everyone stays healthy for the Holidays.

    I think we will be really ringing in the new year, because I am sooo ready for this year to be behing us!

    i hope you had a little wine with your whine Debbie or maybe not (pain meds and all).  I hope you heal quickly and your injury is small.

    tonite I am baking a little ham and will have minestrone tomorrow (it's pretty ok with a ham bone as stock).

    i don't like ham too much unless it is on white bread (anathema) and butter.. (forbidden).

    Ouch! Debbie, I hope you're doing better. Sometimes sprains can be even worse than breaks as far as pain goes. Stay off of it as much as possible.



    Carrie, hope they get your mom regulated ASAP. No one wants to be in the hospital, especially at Christmas.

    Debbie- oh my!!  I hope your ankle is feeling better- talk about a crappy way to end a wonderful day :(  I hope you are resting comfortably now.

    Carrie- I hope they are able to stabilize your mom's heart beet soon.  It must make you a bit nervous.  Sending healing thoughts your families way, that all will be well and soon so you may enjoy Christmas together out of the hospital.

    Jpyce- Your Sunday decorating while watching the Pats game sounds like fun and relaxing.  So glad you got your tree and decorations up and get to enjoy them.  Can't believe your DH went golfing yesterday!  It was cold!!  But he's lucky he can still go out at this time of year at all, might as well take advantage of it.

    Michelle- I hope your rads go well tonight and that you enjoy your dinner with your DS.  And I hope you sleep!  4:30 is waaay to early to wake up.

    I went back to the Dr today and have ANOTHER sinus infection.  This is the third one in less than three months.  It's ridiculous.  This time I didn't wait until I was as bad, why suffer right?  The boys are getting better but still not great.  I think we are getting used to just not feeling well.

    Today I also went and saw my PS to talk about nipple color and have my one year re-check.  I decided not to try to have him fix the color.  If it bothers me enough to do something I will travel to see a cosmetic tattoo artist,  He agreed they would give me a better result.  I was surprised at the end when he said- well- thats it, we don't get to see each other anymore.  I actually got teared up and so did he.  We went through so much together.  From our first meeting and consult through the surgeries and drains etc.  I actually got close to this guy.  So when I put out my hand to shake hands and thank him, he shook it and said you're welcome, but I would like a hug if you don't mind, it seems more appropriate.  I gave him a huge hug- he was just awesome to me through this journey.  Hard to believe it's "done"- is it ever really going to be done for me? 

    So ---- roast chicken for dinner tonight with mashed potatoes and carrots.  Got to get it in the oven.

    Also, am I the only one here who has not bought or wrapped one present for Christmas yet??  Yet, somehow I am not worried.  Dishwasher OCD yet last minute Sally on Christmas, makes no sense!  lol!!

    I can never decide what to make for dinner. It took me a long time to get over aversions to certain things from chemo. Have a 6 yo and 4 yo and they seem to need me the most around the time I'm starting dinner:-) Would love if anybody has ideas for things I can do in advance.

    Laurie - that is so sweet that you had such a great relationship with your surgeon!  Sorry about another sinus infection, there are some really nasty germs out there. 

    Carrie - thinking about you and your family, hoping your mom is improving and out of ICU very soon!

    My DS will be here any minute and we'll be off for #10.  Afterwards we are taking him to a Japanese steakhouse to celebrate his birthday.  He'll be 42 on Friday!

    Kay- here is the recipe for spaghetti pie.  I ate it at a friends house, and when I got the recipe was surprised there is cottage cheese in it. (sorry the measurements aren't exact!)

    1 pound hamburger

    1/2 box spaghetti

    1/2 green pepper chopped

    1/2 medium onion chopped

    1 tsp sugar

    tomato sauce

    1 container cottage cheese

    parm cheese

    butter

    mozzarella cheese

    in a pan brown hamburger, green pepper and onion, when cooked through add enough sauce to make it look like a thick meat sauce- not too soupy.  Cook spaghetti broken into thirds until done.  In a pyrex dish put a 3-4 pats of butter and sprinkle with parm cheese pour drained spaghetti on top, cover with cottage cheese pour burger mixture with sauce over that and cover and bake for about 20 minutes until bubbly.  Top with mozzarella cheese and brown.

    Somehow it is lighter than spaghetti and meatballs- I don't know why?

    ckptry~can't help you in that department, my child will be 36 on December 29th.  Can your hubby occupy them while you are starting dinner?

    Made Boneless Fried Chicken, double dipped for extra crisp thick crust.  DH loved them.

    ckptry- I have a 2 and 4 year old.  Most nights my 2 year old helps me and my 4 year old plays.  It is actually simpler than you would think.    If I am making mashed potatoes I peel and cut them into hunks- he can put them in the pot of water.  If I am doing green beans the same, wash and trim and put in a pile for him to put in a pan.  Little things like that- they love it and they get to say they made dinner.  Typically I just do everything a bit at a time so I am not going to peel potatoes, trim green beans and get the chicken going.  Then they don't even really notice I am doing things. 

    I don't know if this helps or not?  Another suggestion is don't let them watch any tv for the afternoon into the evening, turn it on when you need to cook and watch them freeze to stare at it.  If I am tired or doing something more complicated I do that too.

    ckptry - I think my grandkids are like that...they are hungry right before mealtime and they seem to come looking for attention.  Can you make them some carrot and celery sticks (or whatever raw veggies they like) with a little dip or salad dressing?  Even if they OD on it, you won't mind so much and it will keep them amused.  Or as Laurie suggested, turn on the TV - it's a slam dunk!

    Back from #10 then we went to dinner - very yummy.  We all had filet and everything was cooked perfectly.  Now they want to change my time again for Friday - instead of 6, they would like it to be 4:15.  LOL!  DH took the news pretty well and I think we'll be able to do it.

    Wow, I can't believe they close so early. The place I went to was open from 7am to 10 pm. They schedule all your appointments at the simulation so I had to take what time I could get for the first two weeks, but after that I got the times I wanted. They may have closed earlier some days, but not before 9. I guess every place is different. Glad your DH took it well. And on the plus side, you'll be able to get home earlier on Friday.



    Reheated leftovers for dinner tonight. Everyone had something different. I had salmon, DH and DS had upside down pizza, and DD had pasta.



    Laurie, I can't believe all the sickness you guys have had. You just can't seem to completely shake it. I am sure once you do, things will get back to normal. Hang in there.



    Ckptry, sorry my youngest is 14 and no grand kids yet, and I don't remember those days any more. I do definitely remember using the tv at times though. I really feel for you ladies with BC and young kids. I don't know how you do it.

    When my kids were that age, both my husband and I worked outside the home so dinners were really tough... We shared the same problem in that dinner time was also when we got home after work/daycare so was really chaotic!



    One thing we did was to cook a large batch of whatever we were having on Saturday and Sunday, when there were two of us to cook/occupy the kiddos... that way we had leftovers for a couple of days during the week.... Then, we only had to actually make dinner for a couple nights during the week...



    When my son was born (and my daughter was 4), I took a leave of absence from work.... What I tried to do then was to take advantage of naptime to get something together that all I had to do at dinner time was slip it in the oven or give it a quick heat up.....



    When all else failed, we ate our share of chicken nuggets and hot dog crescent roll-ups....lol! Also many times, we fixed their dinner early and then, we'd eat after... Just depended on how they were doing..



    We used to call that dinner hour 'the witching hour' because it was so rough... It does get better as they get older.... I will try to remember what I used to make and post when I can!!

    Holy Crap!! What a cruddy way to end what sounds like a really great evening....



    I hope it is just a sprain but they can be just as painful as a break and, often times, may take longer to heal! A couple of years back I tripped over something and landed on the side of my foot and wound up breaking a bone in my foot! It was just such a freak thing and the first bone I had ever broken! I just I could have chalked it up to an injury while doing something more adventurous!!



    Hope you are feeling better and your injury is nothing serious!

    Thanks for all your well wishes! Had to take extra pain pills earlier, but feeling a little better now, just so mad about it though, we didn't go to our christmas pary tonight because i can't put a shoe on and not really up to it anyway. The bone on the outside of the ankle is as big as a baseball, hurt worse today, will wait a day or two and go have any exray if the swelling doesn't go down.

    Apple- Funny you said that about the wine because after we got home last night DH asked if i needed anything and i said yes, a glass of white wine, so i did have 1 glass LOL!

    Carrie- When my dad had his surgery, they also had trouble regulating his heart afterwards, which they told him they might and is somewhat normal for this to happen after a surgery like this, they had to shock his heart twice to regulate it. He is doing wonderful now and it has been about 2 years, hope your mom gets better and heals fast, i know you must be so worred as i was for my dad.(((((hugs))))))

    Laurie- Sweet story about you and your Dr. I wanted to mention somthing my primary Dr. told me to get, i was always sick and he told me about these vitamins to take,i kept putting it off and kept getting sick, he would get upset every time he asked me if i got them yet and told him no, then the last time i got pnemonia he reminded me again, so i got them and havn't even had a cold (knock on wood) You don't need a presciption for them, they are like a vitamin i guess not sure, but he swears by them and say's the hospitals are starting to use them for all kinds of things including warding off illnesses. It's called "Acetyleysteine' you can find them at a health food store. the way he wrote it out on the instructions was take 600mg once daily. Maybe this will help.

    Kay - when I had my sim, they gave me my appointment schedule for all 30 treatments.  Then the following week they gave me a new one.  I'm guessing that I might see another new one this Friday.  Actually, next week one of my DDs can take me a couple days a week.  She'll be finished with her college classes (woohoo!!!) and she works 2 1/2 days so she'll drive me if they want me earlier on a consistent basis.  Initially we wanted a 1 p.m. appointment and we could probably get that now.  But we've learned that this late appointment is a better option for DH's work schedule.  And the traffic has been tolerable most of the time.  We just need the weather to continue to cooperate.  So far we've been extremely lucky!

    When I was working with three kids at home, we ate a whole lot of Kraft Mac&Cheese with hot dogs!  Once in a while, I could add a can of tuna and some peas to it and they'd eat it.  And they always ate spaghetti with meat sauce - that was a surefire meal.  I would make sauce on the weekend and freeze it in quart jars.  Or in a pinch, I used Classico Tomato Basil and added it to some ground beef, onions and garlic.  We didn't eat out much during the week back then.  Sometimes I wonder how I did it!  My DH was never home before 7 so I had to handle things on my own and I got home around 5:30.  Those were crazy days!!!

    Debbie - are you treating that ankle? RICE (rest, ice, compression, elevation) it...and if it's not better by tomorrow, you should go get that xray. And take an anti-inflammatory like advil (ibuprofen) or aleve (naproxen) to help reduce the swelling.  Most pain meds have acetaminophen, and that will help with the pain. But it won't reduce the swelling. You can take both at the same time.  just call me "Dr. Mom"...lol!

    Debbie  I wouldnt wait to see, go get an xray, if its broken you dont want it to start to heal improperly.  My DH broke his ankle smowmobiling and waited 3 days to get it looked at, went to work and walked on it for those 3 days, was really out of whack when they tried to set it. Thanks for the infor about your Dad...right now they are trying meds to regulate it, but may have to do the shock thing if that doesnt work

    Michelle, you are moving right along on the radiation, you will be done in no time

    Ckptry  I do remember those days, I could not cook fast enough. I did what Laurie did though.  We have an island in our kitchen and the kids would belly up to the bar and watch me cook while playing or later doing homework.  I would give them peices of cut up stuff, cheese, veggies, to help them get through the waiting.  I dont have any ideas of how to be prepaed ahead of time though, I just kept it simple and quick  I still think I could have used the crockpot more, but not much of morning person getting it all ready before work.

    i've been teaching my kids to cook for years.. they really like it and are really messy and sometimes very slow, especially the dear daughter.  They reserve nites when they can cook the whole meal.. Sometimes it's a near disaster but i don't care.

    Different kinds of quiche, with or without crust, are easy to make ahead. Ditto for beansoups, chilis etc.

     When my dear daughter was that age, i put a little kds table in the kitchen(out of the way) and gave her snacks, and playdough, coloring books, finger paints, anything to keep her busy but yet i could keep an eye on her. I always cooked casseroles so i didnt have to cook the next couple of days, still do that now.

     DR Mom! LOL! yes to all the above haha!

    Pasta with Chunky Garden sauce and Quorn meatballs without soy or meat and maybe Kitty Cat if they don't stop snooping around the fire.

    Sooo, I went to a holiday party, and they had pumpkin, or some kind of squash soup. Normally I would have just thought gross and not touched it. But it was served in baby gourds for the bowl. It was so cute I had to try it. Still not my thing, but presentation can really make a difference. So I think I'll use the good china for my party instead of the gladware. Lol.

    Back from rads, had a quick dinner of chicken parm leftovers, and watching Ellen recorded from earlier today.  DH is cranky so it's quiet around here...lol.  I wonder how long before he takes the remote.  They've changed my appointment times again...4:00 p.m. nn Friday and then 3:40 next week.  I may drive myself next week, now that I am confident in how to get there and it will be daylight on the way in.

    Had supper at our company Christmas party, it started at 4 and ended at 7.  Started off with h'orderves, coconut shrimp, some type of wonton, spring rolls, with lots of different types of fruit and cracker and cheeses. The waitresses walked around with trays of scallops wrapped in maple flavored bacon, more shrimp, chicken, spinach & cheese triangle thingys and a few other types of appetizers.  Then at the carving station was the most delicious roast beef with a jus turkey and a pasta salad with rolls and all sorts of gravy's and sauces.  Then we celebrated our $100,000,000 in revenue.
