    I've doubled my efforts to eat up all the 1/2 cups & smidgens of leftovers that populate the fridge. Last night was leftover carrots w/dill & honey paired with 1/2 a sandwich of leftover egg salad. Today I MUST use spinach. It will be paired with a Whole Foods 7 Grain & Lentil blend. The leftover BBQ brisket has thawed and I will make Cole Slaw so that takes care of tomorrow. Also need to use milk so I'm going to make some Godiva Chocolate pudding adding Tia Maria & Heavy Cream. Not exciting I know.

    I don't mind cooking for one because I can freeze the leftovers. And thanks for the reminder Mommy - I need to make meatloaf before it gets much hotter outside. But It's hard to shop for fresh produce for one and get much variety. And I rarely make cakes or pies since I would no doubt eat the entire thing.

    Someone told me yesterday that you can freeze whole avocados. Has anyone tried it?

    Minus, I froze whole avocados by wrapping each one in plastic wrap and putting them in a freezer bag. I used them for soup so I don’t know how good they would be for salad.

    Carole, I hope you enjoyed your dinner out.

    For lunch I had a piece of Neapolitan pizza with octopus. I prefer the Roman crust but this was something I imagine I won’t see again. Dinner was chicken cooked in tomato sauce with salt, pepperoncini and pesto for seasoning. I normally would have added veggies and different seasonings but it tasted good.

    Brunch yesterday was Greek yogurt with berries, Grape-Nuts and a little fake honey. Was going to grill chicken thighs, but then saw some ready-to-eat stuff at Mariano's (Kroger) too good to resist, on "special:" prime rib ready to reheat, grilled veggies, a crab & spicy shrimp poke bowl over brown rice. Also lots of tinned Spanish seafood. Had the prime rib & veg last night. Brought my calories/calcium/protein up to snuff with late night protein shake and bar. Today, 2 "jammy" eggs over mesclun, with a slice of Dave's Killer Bread toast. Tonight, the other half of my portion of prime rib, plus sharing part of the poke bowl and a Caprese.

    Tonight we're cooking chicken in BBQ sauce in the dutch oven. Also on the stove are brown tepary beans in the pressure cooker.

    I used up the last 1/2 of my cabbage, shredded with onion, sauteed with the 1/2 jar of salsa and 5 campari tomoatoes, added a can of pinto beans, seasonings and topped with some butter and slid in some frozen shrimp (costco). TO DIE.

    Dinner with Rodney and Belinda at Georges Mexican restaurant last night was great fun. As usual we chose to eat out on the shaded patio. There was no end to the conversation as we caught up on their recent trip to Big Sky, Montana, and on their grown children. I resisted the strong temptation to order the nachos and had fish tacos instead. DH had his favorite Tex-Mex food, burritos.

    Today, Sharon and I both were busy in the kitchen.

    Sharon made some peanut butter-chocolate chip cupcakes and started on chicken tacos,

    I cooked some chicken and pressure cooked some beans so she could continue with making chicken tacos. I also sauteed vegetables.

    Went to the gym today for the first time since joining so I'm feeling virtuous, even though my workout was very cautious due to the back issues. I like the circuit machines and it would be easy to over do it.

    Pasta primavera tonight. Lots of veggies going into it so the side will be some fresh pineapple. It's a dole tropic gold and it's delicious.

    chocolate pudding with heavy cream and Tia Maria was delicious even though I scooped into individual containers and not into a graham cracker crust pie shell.

    Wholegrain toast with hummus & babaghannouj for breakfast. Premier Protein Cafe Latte shake for lunch. Blini with salmon & whitefish roe for appetizer, then smoked mussels, Spanish sardines, and red & yellow heirloom tomato on chopped hydroponic green leaf (Gotham Greens "Windy City Crunch") lettuce. Dessert was a Cutie tangerine.

    Fortunately, the kitties did not try to steal any of it—though Roxy did lick leftover creme fraiche off Bob's spoon.

    Lamb loin chops cooked perfectly on the grill by dh. Creamed spinach and tossed salad. Mint jelly.

    Thumbs up on going to the gym, Nance. I haven't been since my surgery.

    Sandy, It sounds like the cats are settling in.

    Nance, I’m glad your back is feeling well enough to go to the gym. My only exercise has been walking but carrying grocery bags is like using light weights.

    Illimae, For dinner I cooked something similar to your chicken in butter/parm sauce but used zucchini instead of yellow squash and replaced the spinach with valeriana. It was good. I had rum raisin and Venezuelan chocolate gelato for dessert.

    Gym-going….good reminder Nance and good for you. Can be hard to get started though I find it easier after I've taken a few first steps back to some routine. Our pool in the community opened and once water hits 83 degrees (soon) I'm there.

    Sandy, so glad the kitties are settling in. We love our kitties too and consider them free entertainment among other wonderful things.

    Have had company for a few days but (Minus) you had asked for the Mediterranean Pasta Salad recipe. Here goes. It was good, not perfect, but only because I added too-thick pasta when I ran out of the proper medium shape.

    Gourment Mediterranean Pasta Salad Delight

    8 oz. bowtie pasta (or any but all the same shape and size, ha)

    1/4 cup olive oil

    2 tablespoons red wine vinigar

    1 clove garlic, minced

    1 tsp. dried oregano

    1/2 tsp. salt

    1/4 tsp. black pepper

    1 cup cherry tomatoes/halved

    1/2 cup pitted kalamata olives, sliced

    1/2 cup Feta cheese, crumbled

    1/4 cup red, onion, thinly sliced

    1/4 cup fresh basil, chopped (really made a difference being fresh, I think).

    Cook pasta until al dente, then rinse under cold water. In a large bowl whisk together the seasonings. Add the cooked pasta to the dressing along with the vegetables and cheese and basil. Toss so flavors meld. Refrigerate for at least 30 minutes before serving.

    We had such a nice time with our friends who visited. My DH and I have said "boy it's quiet around here now." Good memories.

    Have a good rest of the week everyone. Tonight's dinner may be tacos or we'll go out for Italian.

    Thanks Reader. I don't care for green olives so I'll switch to black. That will change the entire "feeling" of the dish, but should be OK. Funny that up until Covid - I was not comfortable 'winging' a dish. I had to follow the recipe exactly. Lots of interesting meals happen when you're open to substitutions.

    Two hot dogs and coleslaw today. Med Center tomorrow for bone scan & Prolia shot with a new endocrinologist since my long time doc retired.

    I love all olives (except those wrinkled black salt-cured dry ones), but one of my faves is green: Castelvetrano. They're huge, meaty and mild.

    Brunch was a faux pizza: heirloom tomato, fresh mozzarella, Penzey's "Frozen Pizza" seasoning, freshly picked basil (had to pinch back my plant) melted atop wholegrain toast. For dinner I'd planned to cook the tilefish I bought today from Hooked on Fish, but it was too windy & chilly to go out to the grill (and I was afraid the cats might be tempted to escape with my forays between kitchen & deck). Had to go to Costco anyway, as I had only 1/4 tank of gas and we needed Tide & TP. No room in the fridge for a chicken, but they had Maple Farms roast duck halves on sale so I bought one. Got it home and found it was two halves. Label said each half was 3 servings, and each serving had 19 gm of protein. So I air-fried them, sauteed broccolini and nuked Seeds of Change brown & red rice with chia & kale. Dessert (late) was a chocolate FairLife protein shake.

    Had to push BangBang off my lap, though, lest she accidentally ingest any of the chocolate on my mouth. She is a big bruiser of a girl (I keep forgetting she's female); extremely aggressively affectionate (I suspect she got her name because she's a headbanger), and has been face-marking up a storm. Unfortunately, I seem to be allergic to her saliva, so I need to steer her away from being so "mouthy" (her canines do overlap slightly and scrape my chin when she face-marks me). Going through a lot of witch hazel and Benadryl cream at bedtime. so the rash abates overnight. Roxy is more chill, but she has bonded strongly with both Bob and our HK. I don't feel guilty about keeping the bedroom door shut (so the light from the hallway doesn't get in), because never in their lives were the girls allowed into their humans' bedrooms and so have never slept on their owners. (Although I've noticed BangBang will occasionally settle down on my lap & chest for a snooze in front of the TV).

    Bob's car is in the body shop getting a scrape repainted, so he'll be taking the train(s) to work tomorrow, Fri. and Sat (when it's supposed to be ready). No after-work Costco stops for him without a car, so it's up to me to be the household hunter-gatherer. Gotta admit I enjoy being able to park in the middle of the garage.

    Beef fajitas last night made with ribeye. Sauteed yellow bell pepper and onion. Refried beans, salsa, sour cream, bought corn tortillas, and guacamole. The latter was the inspiration for the meal. Ripe avocados that needed to be eaten. Easy, tasty meal. Easy is good these days.

    Now I need to figure out tonight's easy.

    Appointment with the plastic surgeon this afternoon.

    Update on dh's jaw pain. The pain specialist has done what he can do. The injection and meds. Meds have helped but the pain continues. Next move is to consult a neurologist. A slow process and we leave for MN on May 20.

    You seem happy with the new pets, Sandy. Must have been a good decision to adopt.

    Carole, I'm so sorry your DH is still dealing with jaw pain.

    Sandy, the kitties sound adorable. I'm envious how well you've adjusted to new cats in your home. I still weep when I mow around our little guy's headstone in the backyard. And where (!!) did you find the duck at Costco??? I may call ours to see if they carry any since we need to pick up DHs new reading glasses.

    Still eating the sausage penne cauliflower dinner from last night.

    Chi….I wish Sharon had not been so allergic to MIL's (now DD's) cat. I think they're awesome and would like to have one…but not at the expense of Sharon's well being. The cat I had before (that didn't see to bother Sharon) was termed "aggressively friendly" by ET (evil twin)…sounds like yours are the same. :-)

    Dinner tonight will be the leftover BBQ chicken.

    What is deconstructed stuffed pepper????

    Dinner tonight was chicken with mushrooms in a cream/wine sauce on pasta. My gelato flavors were stracciatella and rosemary chocolate which was surprisingly good.
