    My father committed suicide when I was twelve.  My little sister was only one year old.  It was the first real traumatic event in my life and changed me forever.  I felt totally abandoned by him, as if he had left us while still alive.  It drove my mother into alcoholism, as she somehow felt responsible.

     The family tried to keep it from me, because he did this while in Las Vegas helping my grandparents run their motel, but I overheard them talking about it.  I didn't tell anyone I knew until I was sixteen.  I probably should have received therapy but just sorted it out on my own over the years.  I used to lie about how he died, but now I just tell the truth. Suicide is a a very selfish thing to do IMO, but then unless you are in that person's shoes, you can't really know what their motives are.  He was a wonderful loving father to me...I never remember him speaking a harsh word to anyone.  Those are the things I try to remember about him.

    sorryfor everyone's losses.

    tomorrow i am making the absolutely delicious, decadent thai food called mee krob.

    just google  MEE KROB RECIPE.   we used to serve it at a restaurant i managed.  People often sent it back and i would get to eat it... yum.. No restaurant in KC serves it so i am making it myself.  Don't have to cook Friday but am serving Easter dinner to 20 on Sunday.. people will bring side dishes.

    My father's brother committed suicide and my father never got over feeling guilty that he hadn't realized my uncle was in such a deep state of depression.  Suicide IS horribly selfish.  My uncle shot himself out in their detached garage and my aunt came home from a dr's apptment and discovered him.  My uncle was in a lot of pain from spinal problems, plus he felt totally useless because  he could no longer work and support his family.  Both my girl cousins were permanently affected by their father's death.

     On a happier note, I cooked quinoa for the first time today.  Here's the recipe Quinoa Salad w/Chicken and Asparagus.

    1 cup quinoa cooked in low-sodium chicken broth.  Allow to cool.

    8 oz asparagus tips (steamed and then cooled; I put chipped ice on them)

    7 oz jar roasted pepper, drained and chopped

    2 cups cooked chicken, diced (I used cooked turkey)

    juice of 1 lemon

    2 tsp olive oil (I used 1 T)

    Combne all ingredients except lemon juice and olive oil.  Whisk the oil and juice together and add to salad.  Chill and serve.

    I tasted the salad before putting it in the refrigerator and it tasted really good.  The quinoa has a nutty flavor. 

    I also got out the food processor and made the rest of the leftover turkey into turkey salad.  Added celery, dill relish, mayo, a little yellow mustard, and lemon juice.

    So presently our fridge contains a big bowl of turkey noodle soup, quinoa salad with turkey and turkey salad!  A variety of turkey for everyone's taste.  I don't know why I get the notion to buy turkeys and put them in the freezer around Thanksgiving time.  I have one more left in there.

    wow Apple- 20 for Easter?!  I hope you all have a wonderful time, glad everyone is bringing sides, thats a lot of work!

    Tonight I am making a ham and cheese and rice.  We go to my in laws for Easter and my FIL does not like ham so they make a turkey.  But I love all the leftovers from making a ham and the dinner its self is yummy so I bought one on sale. Going to go get it in the oven now.

    quinona- I looked in the grocery store for it last week, is it with the rices?  I couldn't find it?

    Laurie- At my store it is in the isle with the rices and noodles but in a area with specialty items in a box. If you cant find it i would ask a clerk or manager if they have it, it is used quite commonly these days and most supermarkets carry it.

    Apple- The dish sounds good, i googled it and it sounds like it takes awhile to make but if its as good as it sounds would be worth it.  Wow, if i had 20 people coming for dinner to my house i would be cooking now! lol! Sounds like you will have a great time.

    Carol- Your quinoa recipes sounds delish.

    Carry- Glad your getting your energy back, mowing the lawn takes a lot out of you!

    I had to cancerl my dentist appointment today, it is 45 minute drive and we are having golf ball sze hail with thunder storms and lightining, im not sure which is scarier the dentist or the weather LOL!

    I found my quinoa in the health food section of the grocery store...with the gluten free items.  You have to really look for it.

    Carole...that salad sounds excellent.  I have a bag of quonia so I'll give it a try.  Sounds good for this hot weather!

    Apple..20 for dinner sounds challenging...you must be feeling a lot better..that's good!  I love thai food so I will google that recipe.

    Laurie - look for quinoa in the area with the dried beans, barley, etc if it's not in the rice section.

    Dinner was soooo good and I am FULL. I made a salad to go with it and it all just hit the spot. Love it when that happens.

    I made chicken stirfly and sweet potatoes with black beans for side dish. Al little asian with a mexican flair lol! Tonight im indulging and having a hot fudge sundae, i dont have one too often but been craving one with lots and lots of hot fudge !!!

    Hi all - I've been reading about all your meals and recipes for months and I finally have a meal/story worthy of this discussion! My MIL (also a BC survivor) had told me that her mother used to fix her favorite meal every time she came home from college. It was pork chops, twice baked potatoes, lima beans and Honeycomb pudding for dessert. Yesterday was her 84th birthday so we had her over for dinner and served bacon-wrapped pork ribeyes with a chimichurri sauce, twice baked potatoes and lima beans. She was quite surprised and touched! I did not attempt the Honeycomb pudding because it takes forever to make so we had birthday cake instead.

    Gina- welcome!!  That is a great story thank you so much for sharing!  Never feel that your recipes or stories have to be "worthy"  just jump right in and join us:)  Our dinners range from yogurt to filet's.  It's all good with this group of ladies!

    Hugs to all of you who shared your painful family histories. Makes me think of the strength you all possess. I also love the constant juxtaposition of life pain and life sustenance in this wonderful forum.

    I had a serendipity at home tonight when I rolled in from a long and complicated day. DH had gone to the store, bought and grilled some very tasty marinated (by him) chicken breasts, grilled asparagus and french bread (his weakness). All I had to do was make a quickie cucumber salad. We both loved it! I made every effort to reinforce his wonderful culinary efforts!! More! More! :)



    Laurie hope you find the quinoa...it is pretty mainstream these days. Are you near a Trader Joe's? They have two kinds.

    Lacey- No Trader Joe's near me, but I have faith in my local store.  I will look in the whole foods section this week and if I don't see it will ask. Carols recipe looks like a perfect first attempt for me.

    The boys drove me nuts today, usually it is one or the other, but today they both were just "out of sorts" shall we say?  aka- crabby.  We got nothing done and went nowhere.  I was hoping to hit the mall and have some fun finding Easter outfits and lunch etc.  I am hoping they wake up in better moods tomorrow.  I  don't think I can do today again.  Of course if I have to I will, but I would rather not!;P

    Debbie:  How did you cook the sweet potatoes w/black beans?  I like both but would never have thought of putting them together.

    Gina- Hi and welcome! I had never heard of honeycomb pudding, so i had to google it, There were a lot of recipes for it most of them different from each other but is seems molassess and buttermilk or cream. It sounds really good. Glad you joined us here!

    Lacey- Your dinner sounds good cant wait until our weather warms up so i can grill. my weakness is also garlic bread. Yumm!!

    Laurie- LOL@ your boys!  I remember the days... lol. Hope your day is better tomorrow!

    Minustwo- I do it 2 different ways, both really good, some reason they just compliment each other and taste so good toghter. The easy fast way. I microwave my sweet potatoes  and heat the black beans on the stove then i mash the SP in a bowl with a little butter, cinammon and brown sugar, actually lots of cinammon b/c i love it then mix the SP and beans together. Second way i peel and cut up in chunks the Sweet Potatoes and boil them until tender, you can leave them in chunks and i melt some butter with cinammon and brown sugar pout over the SP and combine with thee Black beans. I just love this dish and cant get enough of it.

    Michelle- I just rememberd you were driving to relatives for easter, have a great time and drive safely

    I still havnt a clue what im making for easter, DH is working so cant really make plans with anyone else might do a small ham and just make it simple.

    Debbie - thanks!  We are actually driving to Virginia Beach just for fun - beach and golf.  We'll be leaving around 1 this afternoon and plan to stop in Atlantic City for the night.  I reserved a room at the Trump Plaza, so I'll get a little casino action tonight.  Then tomorrow we'll cross from Cape May, NJ on the ferry over to Lewes, DE.  We've done this drive many times.  This route keeps us off 95 going through NY/NJ which avoids a ton of traffic and takes us down the Garden State Parkway.  Then we'll go straight down through Delaware and the eastern shore of Maryland to the Chesapeake Bay Bridge, an engineering marvel.

     Welcome, Gina!  As Laurie indicated in her very first post, we welcome all discussion about food (and anything else, for that matter) from a grilled cheese sandwich to a bowl of cereal to your fanciest restaurant meal and everything in between.  This is one fantastic discussion thread.  And we are all SO  NICE!!!

    Michelle  that sounds like a great trip. We used to travel there frequently with the kids ( had a brother that lived close by)  Hope the beach is nice and warm for you. We also go to Atlantic City every year in Sept for a work trade show and they always have it and put us up in the Trump Plaza.  Used to have it at Ballys, which was my favorite, Mr. Donald Trump needs to update his decor .

    Laurie  Hope today is a better day and the kids give you a break.  AWWW i remember buying easter outfits.

    We will be going to my moms house for dinner on Easter. Yup she called and said she feels up to it. She will bake a ham and we will alll bring stuff to go with it.  I always make german potato salad and a desert.

    Last night we went out and my dinner was an order of sweet potato fries, was not in the mood to eat  ha ha highly unusual for me.

    Kaara, i believe you eat way too healthily to embrace mee krob.

    20 for dinner?  i actually do it often.. my husband and i both had 8 siblings... there are of course the kids.  i am going to add some rosewater (a middle eastern thing) to the iced tea... i better try it first.

    For dinner last night we had a helping of the quinoa salad on a bed of baby spinach and sliced tomatoes and also had a bowl of turkey noodle soup.  The salad was a little dry so we moistened it with some vinaigrette.  DH said he liked the quinoa salad.  This was better than his reaction to bulgar when I cooked it for the first time a few months ago.  He called the bulgar "booger"!

    I'm trying to work more whole grain foods into our diet.

    Our Easter dinner is simple because I and some of my other siblings will be attending 10:30 church service with my mother, much to her delight.  My younger sister is in charge of cooking ham.  I will provide a large potato salad made Sunday morning since we don't like our potato salad chilled.  DH is making a large baked beans from scratch.  He won't be going to church.  My middle brother will bring a green salad.  My mother has decided she wants macaroni and cheese.  My middle sister who will be visiting for a couple of days will make that.  I'm baking a chocolate layer cake.

    In my family we like our ham boiled rather than baked, but you need a cured shoulder ham for boiling and we haven't found one.  So we'll have the regular ham warmed in an oven.  It's much saltier than the boiled ham.  I'll try to eat very little of it because ham makes me blow up like a balloon.  I can weigh 3 lbs more the next day after eating ham.  It's on my "unhealthy" list!

    I know you love it, Laurie.  We buy a Boar's Head reduced sodium sandwich ham that DH likes for his lunch sandwich.

    I'm not a fan of ham either, nor is my family, so I usually do a turkey breast at Easter along with my rack of lamb...plus side dishes of some kind of potato and a vegetable and salad.  I'm keeping it simple because I want to enjoy the Easter egg hunt with the Grands.  Still haven't heard from DS#2 and DIL.  Showing up at family dinners (unless it's her family) is never tops on their list, so I've come to expect that they probably won't show and don't stress over it.

    I do like ham but usually will cook a grilled ham steak because there are just the two of us.  Now that we've moved closer to family, I can see having a big ham dinner one of these Sundays when we're home.  When we moved from CT to MO, we sold our house and had to be out by 12/15.  So we spent Christmas at a Residence Inn in Shelton, CT.  We invited our family and ended up with 15 people for Christmas dinner.  We had a spiral sliced ham, scalloped potatoes, coleslaw and pineapple upside down cake.  I remember it so clearly - it was fun because we were forced to improvise and keep things really simple.  We even had a real Christmas tree in our suite. 

    Traditional NE boiled dinner uses the ham shoulder.  I haven't tried to buy one in decades, but grew up eating it with potatoes, carrots, green beans and onions.  I'll have to check the grocery store and see if it's still available. 

    I am packed and ready to go.  DH, on the other hand, sounds like he's having a busy morning on the phone for work.  I hope he can spring himself loose pretty soon, if we are going to leave around 1.  It's tough when work gets in the way of fun...lol.

    Michelle- great story!  Can't believe you even had a real tree in your suite, thats awesome :)

    Carol- I buy low sodium boiled ham almost every week as well.  I never get honey ham, smoked etc.  I grew up on boiled and I like it so much better.

    Kaara- sounds like you have a busy weekend ahead too!  Also, kudos to you for not getting upset about DS#2 not being in contact about dinner.  It's better to roll with things but easier said then done sometimes.

    Tonight is leftovers.  Left over fried chicken and cheese and rice with salad.  It needs to be eaten and DH called a little while ago and said he had a late lunch.  I figure why go through all the work when I can just pop leftovers in the oven?
