I took Tues and Wed off to meet Nick's parents, Chris and David.  We hit it off so well, it was like we knew each other for a long time.  We went on the MS Mount Washington on Lake Winnipesaukee, it was a bit cold and winding but we still had a great time.  Then we went to Portsmouth NH *that is were DD, FSIL and Chris & David were staying. DH and I booked a room then we went to Ogonquit, Kennibunkport the next day, saw the Bush Compound, very nice went into tons of gift shoppes then we ate in Kittery at Roberts, had some drinks and apps.  Went to their hotel, chatted then came home.  We won't see anyone until August.  I love their british accent.

Tazzy, I am hoping for more energy for you!

Michelle, so glad you had a good time with Joyce

Carrie, I am hoping for the best for your sister. I think that you will be a good source of strength for her

Laurie, are you suggesting that Debbie have "fish" with her friend? as in "fin" or fun"?  in any case I hop you have fun Debbie.

I have a question, I don't have time to look at other sections, and really like this one, so I'll ask here, I have been too busy to pick up my Arimidex for two days and feel great!  It's 11:15 and I'm not tired at all!  Could it be going without it? And has anyone taken a vacation? I know that it's important, but I have 41/2 years left. and feel sooo much better and like myself off it. It's either that or the lasagna that my neighbor made me yesterday. Does anyone have any advice?

Got to admit I just had a hot dog and a small can of baked beans. Not exactly the best food, bit I was hungry, it was there and done in 5min. I had my first big dose Herceptin, was still low with magnesium, so had another iv. Had a pt appt as well. Tired. Came home, it was 89 degrees in the house. So I sat in front of a fan. Hot dog it was. LOL

bedo - it totally saps my energy.  I just made the switch from Femara to Arimidex - I had about 2 1/2 - 3 weeks without and I felt fantastic.  Went on Arimidex a week and a half ago - feel crappy.

Oh, Moonflwr,  Is there any way that you can get an air conditioner, even a used one from Craigs list?  It made such a difference for me.  It's OK, you did well with your dinner!  I hope you get some rest and feel less tired tomorrow.

Michelle- What a lovely day it sounded like you had and all with air ballons hovering above that is awesome! Sorry to hear that about Joyce. so upsetting. Hope her appointments go well tomorrow. Glad you had a great day with her and your other friends too!

Lacey- Congrats on finally getting out of there. I would def ask for some help to get them in your home.

tazzy- I havnt had a stuffed pepper in ages either sounds good when i made them i used red ones is that what you use?

Deb- Love the sun flower wish i could post those kinds of things! Ugghh! Glad you liked your soon to be inlaws, that always helps lol!

Apple-Hope you enjoy your get together with family sounds like fun.

Laurie- I use  (boneless and skinless)   chx breast that i buy kind of thin or pound them to desired thickness. season w/s&p and garlic powder.Lightly dust w/flour brown in some evoo remove from pan- in same pan i add mushrooms cook them down for about 5 minutes then added some garlic and shallots(had extra so threw them in) 2 cans of drained artichoke hearts,(they were the marinated kind) after about another 5 minutes i added about 1/2 cup to a whole cup of brandy and some heavy cream probably about 1 cup bring to a boil let reduce to down to about 1/2 of what it was then put on simmer, put chx back in sauce let simmer for about 10-15 mintues or so. Put over some brown rice i had already in the fridge. Was very good!

Edited to add: i make this with white wine alot too and just as good and if i have some asperagus i blanch them lightly cut them up and put them in the sauce too.

Debbie, that chicken dish sounds delightful! Thanks for taking the time to share it.

Michelle, so pleased for you and Joycek et al. to have such a lovely evening, especially with your magic hot air balloons. It is so cool that you get to see them a lot. I hope she gets to feeling better soon.

Bedo, it is frustrating that these meds cause us to feel unlike our formerly energetic selves. I'm curious that fatigue is not listed as a SE of Tamox... or so my MO says. Is that also true of Arimidex? I hope you can get some good advice to make a well-informed choice.

Moonflwr, Ditto on the air-conditioner recommendation. There are precious few points for suffering!

And no sweat on the hot dog. I can do you one better.....ate tortilla chips and Helluva Good Black Bean dip tonight. And I even had decent leftovers in refridge.....fatigue is not a healthy partner!

Sleep tight everyone.....so exited that I do not have to race anywhere to pack anything.....except my little NH bag for the weekend. ;)

Bedo- LOL on the fish or fin leave it to Laurie to say somethng funny like that!! Sorry to say that your energy is probably from the arimidex or or any of those als. It really did a number on me i would of stuck with it even though it zapped my energy but the pain was unbearable that i had to give them all up i tried them all.

Moonflwr- 98% is hot with out an airconditioner we live on the coast and none of the hoses here have air conditioning or maybe you said 89% but still hot it doesn't get to much over 75% but our house gets like a oven Dh bought a air conditioner that you just fill with water, you dont need to put it in a window it has helped so much i think he paid somewhere around $200 for it.  Hot dogs and beans is such a nice easy dinner one of my DH favorite.

Lacey- Have a fun safe weekend away! When you get a chance i would love the bean dip recipe.

Michelle:  Glad you and Joyce were able to get together and have a good time!  Nothing like sharing friendship to life the spirits.

Bedo:  I think all those anti hormonal drugs make you tired.  I can fall asleep as soon as I sit down to relax...it's so frustrating!  Otherwise, I have a lot of energy...I just can't stop and sit:(  I guess we have a choice to take them or not.  I will put up with tiredness, but not some of the other SE's that I've read about.  There are supplements that accomplish the same thing...just lacking the "scientific" proof that is needed by many.  I take some of them along with the tamox, hoping for a boost.

Debbie:  Yum on the chicken dish!  A good way to use up our brandy that we don't drink anymore;)

moonflwr:  Sitting in front of a fan...lol....I did that in NJ years ago when I was pregnant and had no A/C!  No one dared come near me..grrrrr!

The play last night was awesome...a little silly, but the acting was so good that you had to like it.  We had dinner at a tapas restaurant and I was pleased to see so many gluten free items on the menu, marked as such.  After sharing an appetizer (flatbread with fig preserves, goat cheese and arugula) I had shrimp and grits, except the grits were replaced with polenta and smoked guda cheese...outstanding!  Something was added to give it a little spicy kick which added to the flavor.  The meals were smaller portions (good for us) and very reasonable.  A nice glass of cab was only $5 rather than the $9 we sometimes pay in the big city.  My BF had a lamb t-bone with demi glace served over the polenta..it looked yummy!

Our mornings are still very cool here, but it's expected to heat up later in the day.  Have a good Friday everyone!

I thought you guys might enjoy the picture of how the hot air balloon ride ended last night.  I'm pretty sure that's not how they planned it to happen!

Deb - I agree with everyone, you always find the right picture with the right sentiment!

Kaara - everything about your evening sounds lovely!  And $5 for a decent cab is a definite bargain.

Moonflwr - definitely get yourself an A/C.  No extra points for suffering!!!  Even new units are not terribly expensive these days.

Lacey - I think you're going to have a very nice NH lake weekend!  How's the traffic on your drives north?

I'm happily doing not much today!

Everyone sounds like they are having such a great time with friends and relatives and going to fun places and restaurants.....LOVE summer just for that reason.

Thanks for the sentiments about my sister. She is scheduled for an MRI then to see the breast surgeon.  Unlike me, her tumor is really very sm and has not spread so we are hoping for minimal treatment. She is so discouraged as she is sceduled to retire in August and this is not how she wants to start her retirement. She was my rock during my treatment, and the strongest person I know.

Last night DH worked at marina installing new stereo in boat...so my dinner was two ears of corn and ice cream for desert.

Debbie  like the chx recipe. Even if your friend isnt staying...got you to clean the house huh? My DH always says we should have company more often as it gets the house cleaned.

Have never made stuffed peppers...not even sure if I like them...but would like to give them a try, anyone here help me out with making them?

Carrie - I don't use an exact recipe for stuffed peppers (been making them for eons), but here goes with my "approximate" recipe.

Depending on the number of peppers you want to do (I usually do 5 or 6), about 1 1/2 pounds of lean ground beef.  I usually use 93% for this recipe.

    one egg

a few dashes of worcestershire sauce

a cup of uncooked Minute rice - I use the brown rice version these days

Some finely chopped onion - maybe 1/4 cup, but more if you love onions

A couple tablespoons of chopped parsley, about a teaspoon of oregano, and about a teaspoon of basil.

Salt and pepper - I just do it, no measuring, so what looks about right.

16 ounces of canned tomato sauce.

I take my peppers and cut them in half.  I never use green any more - I like the colored ones so much better.  Place them cut side down in a 13 x 9 glass dish, add a little water, cover with plastic wrap leaving a bit open as a vent, and nuke for about 10 minutes.  This is essentially the same as parboiling them for a few minutes, which is what we did in the pre-microwave days.  You want them still a bit crispy because you're going to cook them more after they are stuffed.

Mix up all the ingredients, reserving 8 ounces of tomato sauce.

Drain the peppers, let them cool a little because they are darn hot.  Then turn them over and fill the pepper halves with the mixture.  Pour the rest of the tomato sauce over the tops, cover again with plastic and nuke until the meat is done.  Or you can pop them in the oven at 350 for about 30 minutes.

They freeze really well, by the way.

I can give you the Greek method for making stuffed peppers. In Greece this is a vegetarian dish, but you could add some chopped meat to the recipe if you prefer.

Take your peppers and cut in a circle around the stalk, which will make a "lid."

boil 2 cups of brown rice till al dente and drain.

    Chop fairly fine:

    1 large onions

    3 stalks celery

    6 cloves garlic

    2 carrots

    1 large tomato

Saute the above in olive oil

    Add in rice

Add in a large handful of finely chopped parsley and one of dill. You can also add chopped mint or basil.

Add in a half a cup of pine nuts.

    Mix well

Fill peppers and stnad tightly togther in a dish, put the "lids" on, pour over about a cup of olive oil (yes, seriously), cover with aluminium foil, bake at 375 for about an hour, remove foil and bake another half hour.

Greeks also often make this with half peppers and half tomatoes that they hollow out and stuff.

Momine - I think I would like the Greek version with a little chopped meat addition!

Michelle, there is no reason it wouldn't work with some meat added. Here we just have a lot of vegetarian dishes because there are many fasting days in the Greek church.

Michelle- are the balloons stuck in the tree's?  So glad you had a great time!  Also, I checked out the campground and from what I can see they have no electricity hook ups etc?  Thats a little too rustic for me!  But thank you and the place does look really nice.

I do my peppers about the same as Michelle.  Although I don't take the time to soften the peppers first.  We usually have them when my dads garden is producing lots of them and they need to be eaten up.

It does seem like everyone is out having great times with friends lately.  I love summer!

So, this morning good friends of ours (one of the families we always camp with) called and asked us to go spend the night with them at their family cottage on the lake.  Of course we said yes :)  So I am getting all the stuff packed up and ready to go so we can leave around 4 and head over.  We will spend the day there tomorrow and head home for dinner time.  I love the lake it is on  and the cottage is comfy and right on the water.  The kids will be so excited when they find out we are going.

Meeting my friend for lunch at 12 and have to hit Target and buy the kids new pails for the beach.  They both have holes in them and I noticed Target had some big ones in their dollar bin.

    Enjoy the day everyone!!

Stuffed peppers were delicious.   Like you Michelle, I never cook them enough.

20 family members?  Enjoy your time Apple and I look forward to hearing about your escapades... I am sure you willh have some,

Deborrye... sounds like you had a wonderful visit.   I love how you all love British accents - makes us Brits laugh as we dont think we speak any different.. ha ha ha !!

Bedo - your hopes worked.   So far I feel the most energetic I have since PFC last Friday Smile

DH wants to take me to dinner tonight - yippee... now I just have to pick a restaurant.

Laurie - I think there is open space on the street side where the balloons came down, although DH wondered if one was caught in the power lines.  They deflated and disappeared rather quickly, so I think it all ended OK.    Enjoy your little lake excursion!

Apple - 20 is a crowd, hope you get lots of help so you have time to relax and enjoy!  And oh, voluptuous tatas!!!

Tazzy - glad to hear your energy is returning.  It's all downhill from here!

ok - i need some steak help.  I never cook steak and am cooking 20 tonite. kc strips mostly.. a couple rib eyes and porterhouse for my husband the biggest eater.. boy will he be happy.  I went to the stores at 6 to buy the ones from yesterday, 50% off.  YEAH!

Any marinade suggestions.. my boys say i should just salt them afterwards. We can't go too spicey.

I just grill the meat about back and forth about 5 min on a side until the meat is slightly pink in the middle. No marinades and folks can salt/pepper to their own tastes.

Unless the meat is very thick, on an open grill it takes about 20 minutes total for cooking.

Michelle- I never thought to cut my pepper in half i like that idea alot. plus it would make it easier for folks to eat. When i make some for my dad who is vegetarian i stuff them with red and black beans, rice or barley tomatoes. parsley. onions. garlic sometimes olives and jack cheese. Hope you have a good do nothing day!

Lauire- Have a nice time at the cottage souns fun.

Apple- I have used a marinade on my steaks before i used wishbone salad dressing and let it marinade for a few hours but really like it with just coarse salt and freshly ground pepper yummmm!

  • LuvRVing
    LuvRVing Member Posts: 2,409

Apple - I agree with Italian dressing as a marinade.  Or lots of pepper - I love steaks with a peppercorn sauce, too.  And there's always Montreal Steak Seasoning - a lemony salt and pepper concoction that you could probably whip up yourself.  We always season our steaks before cooking.

Having a good do-nothing day.  We are going out for steak (Texas Roadhouse, not my favorite but DH seems to have a love affair with the place) then we are going to the movies to see "Ted"...raunchy adult humor, should be good for some laughs.  I tried to talk him into Magic Mike, but he wasn't buying it.  I'll have to see that with my girls.

I agree on the Montreal Steak Seasoning.

Oh! Ted looks hilarious and very adult too.  You must tell us what it was like.    I think Magic Mike is definitely a girls night out movie.

Apple - I agree on the Italian dressing for a marinade also the oils salt and pepper.  Have a blast with your get together!!

Dh is running late but we should be leaving soon.  Hopefully it's not too hot on the lake, no a/c for sleeping!  Lunch was great with my friend.  We had a small garlic chicken nacho and some baby been and cheese chimi's and decided to get another small nacho.  It had garlic sauce on it and sliced avocado and fresh tomato's.  Super yummy.  Now I am stuffed, had 2 (!!) margaritas :)  I guess that is one way to start a Friday get away!

    Have a great night everyone.

Oh, there is a lot of drama at my house too.  2 cats, 1 dog, size of cat. hissy fits, dominance fights, lap fights, who eats first fights.  The excitement never ends.  Cats can be SO dramatic.
