    I used to love going to Pockets but the one in my hood closed but I just checked and there's a Pita Pit 10 minutes (walking) down the street from me. I'll have to try it out granted Pockets has more salads and there's another Pockets about 5 minutes (walking) from Pita Pit.

    Did I mention how much I love living in the city Tongue out

    Yeah, that's the one thing I didn't care for at Pita Pit.  The food choices were healthy but the sides and beverages (other than the unsweetened iced tea) were not.  Chips and overly sweet cookies.

    Oh wait.  Let me go out and come in again. . .

    TWO things I didn't care for at Pita Pit.  The second being that it was noisy and spare.  Not very pleasant ambiance.  Fortunately the weather was nice enough to sit outside.

    Michelle- Glad you are back home and resting!! I'M with seaside if I lived closer I would bring you dinner, glad your family is there for you. Never heard of chinese pie but sounds good, when you feel up to it would you mind sharing?

    Seaside- great news!

    anjinita- Blueberry waffles with homemade maple surup sounds so good.

    Ducky- I havnt heard of basa either- come on give it up lol!

    When I went to hawaii in Janurary I had a mahi-mahi taco almost every day for lunch I just love them but have also had some bad fish taco 's too has to be fresh and with the right ingredients for me. Dont care for cilantro which is in a lot of fish tacos.

    Hubby was out playing golf tonight didnt feel like cooking for just me, so microwaved a bag of popcorn, with chocolate chips sprinkled on them LOL!

    Seaside- yay for B9 results, very happy for you!

    Lago- I love when someone brings me dinner:)

    Tonights dinner is going to be baked stuffed haddock with asparagus and baked potatoes.  I'm happy that the price of asparagus is finally coming down a bit, 2.79 a pound, it's one of my favorite veggies.  I don't cook fish too often because of the boys, but hey, my oldest hated spaghetti sauce a month ago and now he loves it.  Maybe I need to just keep trying to serve him fish!  I try to make things that will apeal to a 1 year old all the way through to a 40 year old man, not easy at times!

    Well, I was reminded why I don't make fish too often.  Both boys were miserable and wouldn't eat anything but asparagus, not even potato?

    I don't have anything interesting to write, I just had raw broccoli and cauliflower last night with some ranch dressing.  I am getting bored with almost everything we eat.  I saw this post and thought PERFECT!  I need some ideas of what to cook for dinner.  I thought I would favorite this and see what happens.  I am excited to learn some new things for dinner.  I was nursing school full time and working full time before the BC dx, so I never was really much of a cook, but I am having fun learning new meals since I have been home the last year.

    I love cioppino . . : ) !

    Last night was grilled chicken, seasoned rice, and chopped salad; I marinated and grilled a whole bag of costco chicken breasts before surgery and froze them, so pulled out a couple, thawed slowly and then reheated -- really juicy and good (can't overcook on the grill or thaw too quickly or they will be dry); chopped salad with black beans and chopped/shredded lettuce, tomato, red cabbage, carrots (leftover from taco night) and tossed with a vinagrette - tasty & fresh. A little crumbled feta would have been perfect. The grilled chicken is great to have on hand when friends comes over for lunch . . chicken salad or grilled chicken ceasar; also ready to toss with pasta/rice/whatever for dinner.

    I am in a phase where I am burned out on shopping & cooking or even trying to think of what to cook. This forum is great for inspiration; I look forward to reading & posting. Thanks everyone!

    Hopeful-there are some good and easy recipes here- Try LAURIES chx salsa its yummy and easy to prepare- and quite a few other good ones.

    Treesprite- made the second recipe for bran muffins you posted they were so good! And what a great idea to cook them and then freeze them for a fast meal for later.

    I made a TIramisu yesterday-  This is delicious- Made it for a friend thats coming over tomorrow- I make it 2 days in advance as it needs it to acheive all the great flavors This is also a great Easter dessert too, always get asked to make this for party's

    INGREDIENTS:

    • 6 egg yolks
    • 3/4 cup white sugar
    • 2/3 cup milk
    • 1 1/4 cups heavy cream
    • 1/2 teaspoon vanilla extract
    • 1 pound mascarpone cheese
    • 1/4 cup strong brewed coffee, room temperature
    • 2 tablespoons rum
    • 2 (3 ounce) packages ladyfinger cookies
    • 1 tablespoon unsweetened cocoa powder

    Directions

    1. In a medium saucepan, whisk together egg yolks and sugar until well blended. Whisk in milk and cook over medium heat, stirring constantly, until mixture boils. Boil gently for 1 minute, remove from heat and allow to cool slightly. Cover tightly and chill in refrigerator 1 hour.
    2. In a medium bowl, beat cream with vanilla until stiff peaks form. Whisk mascarpone into yolk mixture until smooth.
    3. In a small bowl, combine coffee and rum. Split ladyfingers in half lengthwise and drizzle with coffee mixture.
    4. Arrange half of soaked ladyfingers in bottom of a 7x11 inch dish. Spread half of mascarpone mixture over ladyfingers, then half of whipped cream over that. Repeat layers and sprinkle with cocoa. Cover and refrigerate 4 to 6 hours, until set.(Sometimes grate some good chocoate over too)

    Well, I am all ready for the weekend.  I made my quiche today and some banana bread.  Now we can eat with out effort for the next couple of mornings.  My 1 year old is addicted to quiche he bangs on the fridge door and looks for a pie plate, when he doesn't see it he looks at me like "what the heck woman?  Where is it?"

    Tonight I am going to make lasagna and salad, again good leftovers if I feel like being lazy Sunday night.  Not to mention no one should complain at dinner tonight.  My husband was thrilled I made fish but even he agreed it wasn't worth the whining.  Yet I grew up that you ate what your mother made no matter what.  (Thank God I loved 90% of anything my Mom made!)  So I work very hard not to let myself cave and make different dinners for everyone.  Although, I come pretty darn close sometimes!!

    I think we all hit that point where we are just tired of everything that we make!  That's what makes this thread so fun!  You get ideas that you just wouldn't have thought of....     Edited to add: I tried the link to make sure it worked and they are having some kind of sour cream recipe contest so the first page or 2 are all recipes that use sour cream.  If that's not your thing you may want to start looking a few pages in...

    Sounds like you've got the weekend covered food-wise although, if quiche and banana bread are on the menu every weekend, I may just show up for breakfast one day!

    Seaside- come on over!  Quiche is always on the menu, banana bread I make if there are bananas to use.  Again, the kid thing.  Some weeks they all the banana's in a few days, some weeks they don't eat them all.  It's a crap shoot. 

    Sometimes I worry about what will happen when the boys get bigger, I will have three manly appetites to feed.  As it is we eat a quiche and a loaf of banana bread over two days.  How many will I have to make in five years?  Keep in mind I don't do much of the eating.  How will I ever keep up?

    About this many....  Lol!

    Honestly though... When my son has friends spend the night they do just about eat anything that isn't nailed down!  BUT I find that to be a nice change of pace from my making something and my kids not eating it!

    What I have been doing with the bananas that are on their way out, if I am not in the mood to use them right away, is to peel them and put them 3-4 to a bag (depending on what your banana bread recipe calls for).  That way, they are all ready to thaw the day before I want to make bread. Works really well (frozen and all) in smoothies, too!

    great tip Seaside!  I had no idea you could freeze bananas!  I do love feeding people so I am sure I will enjoy the boys appetites when they get bigger.  At least one prefers sweet and the other salty so they will off set each other:)

    One more thing on the freezing banana thing... I do roll each peeled banana individually in Saran Wrap before I put them in the freezer bag.  Not really sure why or if it is necessary but, it's what I do.  Guess I'll have to google it!

    I started doing the banana freezing thing about a year ago.  I don't even peel them!  They open easily once they've been frozen and slide right out of the peeling.

     I don't know what to eat tonight.  DH went fishing and the fridge is empty of leftovers.  Cottage cheese and fruit?

    Lago- LOL!!!  I have never actually seen those?  Heard of them perhaps but never thought of it as frozen food for storage.  I love bananas and chocolate though.  Maybe I'll do that instead of making bread:)

    Debbie..............Oh Lord you are a woman afer my own heart..........that is my favorite dessert..Actually I had it tonight........My son took me to dinner........I had mussels white, and that was my dessert......There are a couple places here who make great tiramisu........one is Termini's Bakery in South Philly, and the other is Pica's restaurant, in Upper Darby, Pa.......The absolute best I have ever had came from a place in New York, called Ferrrara's....You can google the place, and it comes up........They ship it, and it is fantastic, but not cheap.

    Basa is a member of the catfish family........sometimes it is called Swai........It is a fish without bones, very white in color, and delicious no matter how you prepare it. ...It has a nice texture, and the best part as I said "no bones", so you don't have to worry about kids eating it, if they are fish eaters................but it is hard to get...Only 1 store in my town ever has it, but they are right around the corner from me, so it is always available.........My son could live on it.

    Debbie I will have to make your Tiramisu.

    Anyway, Hi Everyone!

    I'm back from Santa Monica and ready to start cooking again.  Tonight I'm making fish tacos again, but this time I will use Michelle's sauce recipe instead of plain greek yogurt.

    I have an Ice Cream Tiramisu recipe that is GREAT for summer:

    Line an 8-inch square pan with nonstick foil, leaving a 2-inch overhang on two sides.  Grate 3 oz. bittersweet chocolate (1 cup).  Arrange 18 soft ladyfinger halves on the bottom of pan, slightly overlapping.  Mix 1/4 cup each strong-brewed coffee and coffee liquor in a small bowl.  Brush ladyfingers with half the mixture.  Place 1 pint coffee ice cream in a large bowl and stir until smooth but not melted.  Spread over ladyfingers, then sprinkle with half the grated chocolate and 1 1/2 cups whipped topping.  Place in freezer 30 minutes.  Repeat layers using 1 pint Dolce le Leche ice cream.  Cover with foil.  freeze 3 hours until firm.  A half hour before serving, place in refridgerator to soften slightly.  Peel off foil and place on serving platter.  Garnish with chocolate curls and cut into squares.  Freeze remaining squares.

    I like the chocolate-covered penises, I mean bananas!

    Thick rich sipping chocolate to start off the morning this morning! I'm off coffee so gave myself a treat with a mixture of cream/milk heated in the microwave & then stirred in semi-sweet chocolate chips till smooth and drinking consistency - decadent! There are lots of recipes on the internet; I'd probably follow one of those next time, but for a quick & easy chocolate fix!

    All these tiramisu recipes sound wonderful!

    It is another gray & rainy day north of Seattle, but the spring flowering trees, bulbs, & primroses are beautiful.

    Tonight is a dish my mom used to make.  She prided herself on going to restaurant and then duplicating a dish she had.  She ate this at a Japanese place and it's called Bulogi.  A pork tenderloin sliced thin and sauteed, add pineapple you make a light gravy from a roux and serve over rice.  It's very quick and simple.

    No dinner for me tonight since today is prep day for my colonscopy tomorrow morning.  DH will be dining on leftover chicken marsala which I made last night following Emeril's recipe.

     I think if you page off of the current page you are on and try to come back, you lose whatever you were typing...  That ice cream tiramisu sounds sooooo good too!  Coffee and dulce de leche are two of my favorite kinds of ice cream...yum!

    I bet that would be really good.  Most of the hot chocolate mixes tend to be a milk chocolate but, I would think the semi-sweet chips would make it even more chocolatey!!!

    Pork and pineapple go really well together!  Do you use pineaple chunks or crushed and drained or undrained?
