    Hi everyone!  I'm back among the living, sort of!  We took my daughter to the airport this afternoon (so sorry to see her go, but the grandkids and her husband were counting down the hours until she got home).  We stopped at Panera afterwards for tomato soup and Fuji apple chicken salad.  It's 6:30, I should probably be thinking about eating.  Maybe it's just all the meds (mass doses of antibiotics) but I don't have much of an appetite. 

    Laurie and others - thanks for the offers for meals, you may get your chance yet.  There's a good chance I'll be back in NH within the next month.  I don't want to embark upon 8 months of treatment with no family support.  We are going to try to pull off a miraculous move - getting my mom in a senior living center and getting us in an apartment, and either renting or selling our house.  We have kids in Candia, Hooksett, and Merrimack, NH, plus my daughter and her family in Acton, MA.  We will try to get within 30 minutes of all of them and the place for my mom.  Like I said, it will be a miracle if we can pull this off quickly. 

    Someone asked about Chinese Pie, so here goes...brown about a pound of lean ground beef (I like 93% lean) with about 1/2 cup chopped onion.  At the same time, boil 4-5 good size potatoes until tender.  I used to peel them but gave that up when they started selling potato skins.  Mash the potatoes and add a generous dose of shredded cheddar cheese.  In an 8" or 9" square pan, layer the ground beef with the onions, generously seasoned with salt and pepper.  Then add a bag of your favorite frozen corn, microwaved so that it's thawed out.  Dot the corn with a little butter, then top with the mashed potatoes.  Pop in the oven at 375 for about 30 minutes or until it's all nice and bubbly and the top starts to brown a bit.    This is an easy recipe to double - I usually do it in a 13 x 9 pan, and then freeze the leftovers.  Or make it in two separate pans so you have one for later.

    LOL...hubby just called me to the kitchen.  "You know how I like those garlicky pork chops at Stroud's (a local comfort food restaurant)...can we do this with these boneless pork chops?"  So the olive oil, chopped garlic plus garlic powder, salt and pepper is in the plastic bag with these chops taking a little "bath."  I told him I thought we could just pan broil them in the cast iron grill pan and he said "should we finish them in the oven?"  The man has been watching cooking shows, can you tell????  I think I'll have him make a waldorf salad to go with the pork.  I'm thinking he can do it!

    Michelle- Yay for your husband getting into cooking!  My husband is actually an excellent cook, probably better than me, but he cooks rarely now that I am an at home mom.   I'm glad you enjoyed your visit with your daughter.  Please, let me know if you move back to NH, I am always ready to help a good person such as yourself!

    I'm with Laurie... NH is not too far from where I am in upstate NY that a road trip would be out of the question!  Plus... if I understand things right... and I make it on a weekend, I can stop off at Laurie's for some quiche and banana bread!

    Of course, if I read back through this thread, the banana bread may have turned into a "whole 'nother thing"....  lol! 

    Seriously, though.. All of the arrangements that you need to make right now are going to seem a bit overwhelming BUT it is the storm before the calm!  Once you get everything taken care of for your move, get where you need to be AND begin your treatment WITH the support of your family it will all flow from there!

    Nothing but sustenance food here tonight.  BUT - speaking of chocolate desserts, here's one of my favorites as far as whipping up something quick.  A local restaurant used to serve this off the menu and you had to be "in the know" to order it.  The mention of coffee ice cream made me think of it.

     Mud Pie

    Mix crushed oreo-type cookies and a little melted butter or margarine and pat into pan of your choice.  Top with coffee ice cream, sprinkle remaining crumbs and put in freezer.

    When ready to serve, cut into squares and top with hot fudge, whipped cream and a cherry.

    So easy and nice enough for company.

    OH my I'm never gonna look at a banana the same again LOL!

    Finally got some quiet time after having company the last 2 days, the tiramisu is all gone but was so dang good- The oreo and icecream one sounds good too- And I love mud pie!

    Ducky- I love catfish just never knew it was also called baso- any white fish with no bones has to be a keeper

    Sherrill- thanks for the icecream pie recipe (drooling)!

    Michelle- Thanks for the chinese pie recipe sounds like somthing my husband would love, I have made somthing similar but with a corn meal crust. I hope everything falls into place quickly for you before you start treatment.

    Carol- Good luck with the colonoscopy, hate those things the prep is worse than the procedure, praying for normal results also.

    Tree- Yuckky here on the oregon coast as well, so DEPRESSING!!! I need some SUN!!

    Seaside, Laurie and all you other Northeastern gals - we'll have to plan a get-together after I get out there.  I lived in upstate New York (Pulaski) for ten years...now that's one place I'll never go back to live.  I saw enough snow there to last me a lifetime.

    Lago - I forgot to comment on the frozen banana picture...OMG I laughed so hard!  If nothing else, you have maintained one heck of a sense of humor through all this! 

    Before I was diabetic, I used to shove "past due" bananas straight into the freezer then use them to make banana bread.  Just make sure you put them in a bowl as they thaw because they will sort of melt all over the counter.

    I'm going to have to take a valium pretty soon.  Seems like my chest muscles have decided to indulge in some gymnastics that I haven't noticed in the last few days.  Once I take that pill, it will be "lights out" for me!   Night night, all!

    Tonight I had an amazing spaghetti dinner at my daughter's...She is 1/2 Italian, and learned from her Mom (Irish) how to make the best gravy possible......sausage, pork, a piece of roast beer, and the greatest meatballs you ever tasted, and cheesy garlic bread........This lady can cook.  Great dinner........

    I feel like such an amateur on here.  I just ordered Pizza tonight, and pealed potatoes and carrots and put a roast in for tomorrow.  My son plays high school baseball (JV and Varsity) and on a travel baseball team, so I have games nearly everyday from April to August.  Unofrtunately, I have to be quick with most of my meals.  Anyone got any good crock pot meals?

    Had my son's family birthday today: baked cheese tortellini, garlic rolls, & salad. Decadent tortellini with pesto alfredo sauce, mozzarella, Parmesan, & grilled chicken. Super rich, a little goes a long way! It was such a great day; I love it when the family gets together.

    I made cabbage rolls this weekend. My daughter is getting married next month and we are all trying to slim down so I omited the ground pork and the rice from my standard hungarian recipie and it was still very good.If any one is interested I will post my recipie.

    I lived in Yakima, Washington for about 1 year...............If I was there I would make a nice pot of gravy, and bring it to you.............Love your state....................hugs.

    Tonight is chicken scallopini and roasted broccoli:

    where it calls for chicken demi-glaze you can use chicken stock or broth- I always double the recipe.

    INGREDIENTS:

    • 1 clove garlic, pressed
    • 1/4 cup butter, softened
    • 2 skinless, boneless chicken breast halves
    • 1/2 cup all-purpose flour
    • salt and ground black pepper to taste
    • 4 ounces sliced mushrooms
    • 20 capers, or to taste
    • 2 tablespoons lemon juice
    • 1/4 cup white wine
    • 2 tablespoons chicken-flavored demi-glace, or to taste
    • 1 teaspoon chopped fresh parsley, or to taste
    • 2 lemon slices

    Directions

    1. In a small bowl, stir together the garlic and butter until well combined. Set aside. Place a chicken breast half on a work surface with the thick side facing to the right (if you're right-handed), and place your left hand down on the chicken breast. Using a very sharp knife, carefully cut the chicken breast from the thick side to about 1/2 inch from the edge of the thin side, in a horizontal cut. Open the cut chicken breast and spread it out like an open book. Using a meat mallet, gently pound the butterflied chicken breast out until it's an even thickness.
    2. Place the flour into a shallow dish, and dredge each chicken breast on both sides with flour. Melt the garlic butter in a large skillet over medium heat until it stops foaming, and cook each chicken breast until golden brown on both sides, 6 to 8 minutes per side. Sprinkle each breast with salt and pepper. Remove the chicken breasts to a platter, and keep warm.
    3. Cook and stir the mushrooms in the same skillet as the chicken until the mushrooms have absorbed the remaining butter in the skillet and have begun to turn brown at the edges. Stir in capers, lemon juice, white wine, and chicken demi-glace, and stir to combine. Reduce to a simmer. Adjust salt and pepper again, and stir the parsley into the sauce.
    4. Remove the chicken breasts to plates, and serve the sauce over the chicken. Garnish each serving with a lemon slice.

    Debbie- Your recipe sounds great!  I have chicken out for dinner and had no idea what I was going to do with it.  Pretty sure I have all the ingredients, if I do I am making this tonight!  Thanks for posting!  Sounds like it would go well with rice?

    How do I have capers in the house but not lemon?  Grrr!  I will add lemon to my grocery list and try it this week.

    Slimmer version of cabbage rolls

    Chop and brown 2 med onions with 3cloves of garlic ,Sand P When cool mix together with 1pkglean ground veal and 1pkg lean ground turkey.Then add 1 finely chopped carrot.I also added some minced italian parsley. Then seasoned the meat with SandP and paprika and a little garlic powder.Blanch and seperate 1 head of cabbage.Roll meat in leaves.Our family likes the big.I added one egg before mixing.

    Place 1 jar or can of saurkraut on bottom of roasting pan put cabbagerolls on top.The top with either 1can of tomatoes blended or 1 tin of tomatoe juice works as well.If you use the canned tomatoes add another cupof water aswell.Top with remaining cabbage chopped up and bake for 2 hours. 20min at 400 then trn it down to 350 for rest of cooking time.

    For traditional recipie I use veal,pork,and beef and add 2cups raw rice and skipped the carrot.But my daughter and her Fiance says the slimed down one is just as good.(also omitted the egg)

    Serve with low fat sour cream on side but ladies don't forget the sourkraut layer underneath.Inportant for flavour.

    Salt and black pepper yes they are really good but alot work so I always make a huge pot. they are even better the next day reheated.

    Yesterday we had a full day of activities with the kids, so dinner was easy.  Whole grain wraps spread w/ pesto and filled w/ fresh mozarella, roasted red pepper and romaine lettuce.  They are a staple in our house, especially in the summer when you don't feel like putting on the oven.

    Tonight was rather boring: Parmesean-crusted chicken, rice and a cucumber/grape tomato salad. 

    I decided to get organized today.  I have this folder with a million recipes printed off the internet, clipped out of magazines, newspapers, etc that I have never made.  I separated them into catagories:  main dishes, side dishes, desserts, appetizers, salads, etc, and put the "un-tried" recipes in their prospective envelopes.  My goal is to pick 2 new recipes per week and try them.  If they are good, they will earn a spot in my little recipe box.  If they bomb, they go in the trash.  That's my intention.  We'll see if I follow throughSmile

    Those cabbage rolls sound really good! One of the Ukrainian churches here has a festival in the summer months where they serve those!  So.... So.... GOOD!

    Pulaski is DEFINITELY snow country!! My daughter looked at going to school on Oswego... We took the tour during the summer months..Beautiful campus right on the lake BUT... that ALL changes in the winter!  Glad she chose a different school!  We are more in central NY!

    I am Mom to a hockey player and we just finished our (Oct-Apr) season so I KNOW how you feel!  Dinner last night for my husband and I was at a local Mexican restaurant... OK  food but REALLY good margaritas!!

    It really doesn't matter how complex or simple what anyone is making is... As Laurie said when she started this thread, it may just be a grilled cheese sandwich that really hit the spot!  One thing that we all share is we all have to eat!

    Seaside - the year before we left Pulaski, we had 360 inches of snow...yup that's right!  Almost half of it fell in the month of January alone.  It was beyond ridiculous. 

    Tonight's dinner was more or less a repeat of last night's...the rest of the garlicky pork chops with some pasta (made by our neighbor) and cole slaw.  Hubby served it up, so it was even better! 

    Feeling OK tonight although I've decided that these surgical/sports bras are just not made for my physique.  I'm just too short-waisted and so they come down too far, then they want to roll, the band is hitting me in the wrong spot.  Maybe I can switch to a nice soft cami after my PS visit on Thursday.

    I did the same thing with my recipes last year!  Went through and sorted them by category and ditched a bunch that I knew I had made and didn't like!  Why in the world I held on to those is anyone's guess!  I also found things that I liked I had printed multiple times... Got rid of the duplicates!  So much easier now to know if I am looking for a "side-dish" I only have to look through that file!

    I have since gotten better at, when I make a new recipe if I like it it gets saved (along with notes of anything I changed) if we don't like it, out it goes right away!
