So...whats for dinner?

Carole, Wise to have a lettuce free salad.
We are having constant rain so at least it’s not hot.
Dinner tonight was strip steak, sautéed zucchini and tater tots for DH.

Dinner last night was hamburger patties, hand formed and overcooked in a skillet. Also, Dave's mac and cheese. We celebrated dh's Hole in One at golf yesterday with ice cream for dessert.

Carole, Congrats to your DH! Ice cream is an appropriate celebration of that rare feat.
Wally, I hope you’re hanging in there as you deal with all the paperwork and tasks that are a PIA at the best of times. I’d help if I weren’t so far away.
Dinner tonight was pan fried tilapia, cauliflower and tater tots for DH.

Appreciate your kind thoughts.
I made kielbasa with cabbage and carrots along with canned gigante beans.
The paperwork continues. Social Security is not social or secure…idiots…
I managed to go out for breakfast with my nice neighbor, filled car with gas (YIKES) and bought wine and cabbage…couldn't do more. Next few weeks will mean more paperwork and visit to bank.
My fridge has failed me…not even 5 years old and the gasket door seals keep failing. I'm over it. Sobbed thinking DH won't be here to foist his opinion on me. SOB.
Sorry for any repeats.

Thinking spaghetti for dinner tonight. Its been too blasted hot or muggy to do a lot of prolonged cooking.

Wally, I'm glad that you're back to cooking.
We had breaded pork chops last night, browned in a skillet, with leftover green beans and potatoes. Also, a delicious salad. And canned cranberry sauce with berries for dh.
Today we're planning to take a drive to a casino. We haven't been there before but are hoping for a non-smoking space to contribute a small amount of gambling money. Also hoping for a restaurant for lunch.
It's overcast this morning after some gentle rain during the night.

Carole, I hope your casino excursion is fun. It sounds like a good activity for an overcast day.
m0mmy, Cooking pasta is a good strategy to control the heat in the kitchen.
Wally, Your kielbasa dinner sounds good. I hope you can get a repair person to replace the seal on your fridge. Ours was replaced about 15 years ago and is still working fine.
Dinner tonight was Kung Pao chicken. Nance, I thought of you.

Dinner tonight was a stir fry of shrimp, veggies and soba noodles.

The casino excursion was a pleasant diversion. It's a small casino and there weren't many people gambling. On the way home, we stopped at Lobo's Bar & Grill and had lunch. We have eaten there in the past and enjoyed their pub style food. I had a walleye sandwich and dh had a burger.
We had a mediocre day at the farmers market yesterday, but the weather wasn't as hot as last Saturday. Dinner was a frozen pizza. I have gotten the knack of using the gas grill on the deck to serve as a hot pizza oven. Pat on the back.

Hi all, have been keeping it simple with whatever the CSA brings. Zucchini and garlic, with chick peas and feta. And the bread.. oy vey… heaven.❤️ DH is healing, and it’s relaxing to just be simple these days . Hugs and bon appetite to all.

Dinner last night was leftover chicken strips that had been sauteed in butter, onion & chicken broth - served over Quinoa & Wild Rice with mushrooms added. Tonight was a hot dot. I split & freeze in parcels of 4 (as I do with the buns) and I still have one more to finish. Never the less, I think I'm going to do Dill Potatoes tomorrow. I miss salads but not ready to eat lettuce yet.
Carole - glad to hear the casino was fun.
Maggie - I like the stir fry shrimp!!
Wally - I too have had a gasket replaced on a fridge. I think of you every day as you forge your way through.
Still 100 degrees. But actually supposed to get down to 79 tonight. (woo hoo - cold spell)

Hi Wally……Hugs….
It was 99F here today….I was out "weed whacking" the tumbleweed. The stems are woody enough that I had to switch from the string to plastic blades. I'm covered in weed debris; what a mess :-) This morning I was watching episodes of the 1952 series, "Victory at Sea". I should have done the yard work first when it was cool….not too smart on my part!
Sharon ate at the music jam. I'm not sure about dinner. Probably some of the leftover spaghetti.

Carole, I haven’t cooked much on an outdoor grill so I admire those who can use them well.
Rhonda, Glad to hear your DH is improving. Letting the CSA provisions direct your meal plans lets you be creative as well as simplify things.
Minus, That chicken dish sounds delicious. With the cyclospora outbreak still active I’m also avoiding salads. This year that’s another benefit of Rhonda’s CSA.
Eric, I like the music from “Victory at Sea.” I would have used the temperature as an excuse to ignore the tumbleweed.
Dinner tonight was chicken in orange sauce, cauliflower and mashed potatoes.

Last night's dinner was delicious. It started with thawing a chicken breast. A package of chopped spinach, a jar of Rao's alfredo sauce, a package of cooked linguine out of the freezer. Yum. DH and I agreed the chicken could have been left out. Our salad was just as good with lettuce, tomato, sweet onion for dh, blue cheese and blue cheese dressing. The lettuce is red leaf head lettuce from the market, the tomato a dark red heirloom.
The produce vendors at the market are selling out of lettuce.
Maggie, my gas grill, a cheaper model, has three burners. It also has a heat gauge. When I use it as an oven, I light all three burners, close the lid and heat it to 400 degrees, turn off the middle burner and adjust the other two as needed to maintain the temperature. When we use it as a grill, mainly for ribeyes, dh is the cook.

I love the VIctory at Sea series.
Dinner was Dill Potatoes. Melted butter in a closed dutch oven on low with fingerling potatoes so mostly steamed with Dill & Garlic. Yum.
I can't force myself to go out & do the needed weeding. 101 degrees in the shade today on my covered North facing patio.

Carole, We don’t even own a grill. When DS was in high school he worked part time for a catering company because he could wear his band tux. He was always put in charge of grilling steaks even though he had no experience. The men attending the events would congregate around the grill and decide when the steaks were cooked appropriately. DS just pretended he knew what he was doing and got good tips.
Minus, Dill and garlic is a great combination. When the weather is that hot staying cool is far more important than having a tidy garden.
Dinner tonight was steak enchiladas and Mexican rice.

I'm prepared for my flower beds to be a jungle when I get home in either late September or early October. We have the lawn mowed regularly while we're gone, but the flower beds are on their own.
Last night's dinner was a skillet dish with ground beef, canned tomatoes, corn off the cob and cubed eggplant. I also cooked some brown basmati rice that I bought at Aldi's. I wished I had my little rice cooker, but the rice came out ok. Tonight I'll add something to the leftovers, maybe yellow squash or maybe canned pinto beans. We'll also have another salad with fresh from the farm ingredients.
I'm sure I would enjoy your dill potatoes, Minus.
We're enjoying cool weather today. A front came through last night bringing rain and cooler air.

We’re enjoying resort weather here with temps in the 80s and low humidity.
I miss my flower beds but not the maintenance.
Tonight is American chop suey.

I need to do some more work in the garden…When it rains, the desert flowers quickly "get going" because their growing season might only be a couple of weeks. In 3 days, some of the stuff went from just emerging from the ground to ankle high.
Today is "Young test daughter's" 48th birthday. She was 6 when I first met her…..getting old, I am… :-)

Eric: I proudly wear the T-shirt I purchased last year " I See No Good Reason to Act My Age"
My BFF is going to drive in and spend the night Saturday. We have the same August birthday but she lives in Dallas now. We will eat dinner a lovely "old" Prime Rib/Italian Restaurant. Probably talk all night & then I have a fruit bowl for breakfast (cantaloupe, honeydew & pineapple) along with a Raspberry/Lemon loaf and mini blueberry muffins before she heads north to Conroe for doc appointments Monday.

Carole, That combination of vegetables sounds good. I love looking at beautiful gardens but the only flowers I have are daylillies which grow like weeds.
Nance, Enjoy the good weather while it lasts.
Eric, Time flies when you are having fun. Like fine wine you are improving with age.
Minus, That is a great t-shirt statement.
Wally, I hope you are making progress with all those time consuming tasks. It’s so hard when it’s the last thing you feel like doing.
Dinner tonight was salsa verde chicken enchiladas and Mexican rice, continuing the theme from last night.

I don't know how to act my age…..I'm still figuring it out. I've never been this age before. :-)
2 -
That's a good tee shirt slogan, Eric.
Wally, hope you will check in.
I feel like we are suddenly finding ourselves in MN. I put the fleece blanket on the bed last night and plugged in the little electric heater this morning. The high temperature today will be in the 70's. The weather is back to "typical."
I have a longish list for grocery shopping today. When I get home, I'll know what the dinner menu is.

Hi Folks….
I'm hanging on by a thread. I've called DH's gun club guy to see if they want any of his stuff for reloading; he's coming this afternoon.
Our weather has been decent. Got to 76 yesterday, and probably today before our cool down, high 60s. No fire smoke so far. Glad they caught the idiot that started the Spokane blaze.
I've been eating but nothing creative..scrambled eggs with spinach, tuna salad with mashed avocado, corn chips with cheese, etc. Tonight, I'm going to force myself to make duck breasts. DHs favorite. I'm sobbing already just prepping them….since I have 2 of them, I'll make one in the air fryer and another as a french-stew type thing…no one to complain I overcooked it 😭
3 -
Wally - So glad you're hanging in with us.
I've lived alone for many years now and 80-90% of my meals are like that. I like tuna salad served on avocado. Today was a hot dog for lunch and dinner was green peas. Tomorrow will be leftover Seeds of Change organic brown rice with Quinoa - doctored with canned mushrooms, some leftover bits of Rotissarie chicken from the freezer and the last of the green peas. Friday I'll make a 3 bean cold salad. I sure have no desire to cook in the 101 degree heat.

Warm today. The A/C may kick in …maybe.
Minus, I'm so used to making 2 solid meals/day for 33 years…the dietitian in me wants to eat balanced, but the widow in me could care less. And UGH on 101…I cannot complain so far.
The guy from the gun club was extremely kind…they always have "volunteer" weekends so maybe I will go do my bit on DH's behalf.
1 -
Wally: When I feel guilty about not eating 'balanced', I buy yogurt to get extra protein. But of course it's been several weeks now since I've had a leafy green salad, and I really miss that. Substituted with tomatoes & cottage cheese - but that's not really a salad. What would you do on a 'volunteer' weekend at the gun club?
0 -
They have various tasks…painting or putting stuff away, clearing things or prepping for contests they occasionally have. Not sure if my "skills" would be helpful, but I can offer it. Not far from home so if I'm not useful, I can go back home. Leafy green salads were our mainstay when DH was alive…various proteins tossed in…I haven't been able to do it yet. Haven't been able to find a decent tomato (not trying really hard this year). I have a frozen "log" of mozz cheese for DH's favorite capresse salad….ugh.

I had the opposite problem…..I gained almost 70 pounds in a year….I went from running 90-100 miles a week and eating normally to "depressed eating"and "just sitting there".
The local gun club here is always needing stuff done at the range and I'd guess 90% of the things are only very tangentially related to shooting or firearms. I'm guessing it would be the same there.
This morning I brought in a dozen vine ripened Roma tomatoes from the garden. I rinsed one off and ate it like a peach. It was wonderful and far better than the store bought ones.

Minus, 101 degrees is too hot to cook. It sounds like you have figured out how to make meals without turning on the stove.
Wally, Keep on hanging in there.
The stars aligned tonight and I was able to attend a live performance of Verdi’s Requiem outside at the Hatch Shell. Temps were in the low 80’s so with the breeze off the river it was comfortable. The last time I tried to go to a concert it was moved inside due to the threat of thunderstorms; that nixed it for me.
Dinner tonight was “steakhouse pasta” from the hospital cafe which was good. I have never had this before so I’ll have to do some research and try to replicate it
