    I am making london broil and stuffed potatoes , rice.

    I love to cook because for me it helps me with stressing, I retired from the medical field in a Cancer Center, and found that cooking was it.

    When I got married did not know how to cook, in my birth country was not expected I should, once my parents accepted my future husband I went to cooking school, and since then my love of cooking, had great Italian neighbors that as a young bride were my fantastic teachers, my husband jewish friends grandmother's showed me how to cook American jewish dishes.

    So I cook from scratch.

    I guess it compensates that will not and never ironed, cleaning is a chore.

    But we all have our likes and dislikes.

    I cook dishes from all over the world,having lived in many countries, and I am a fast cook.m.

    I love the new gadgets for the kitchen.

    During my chemo I had cravings of hot food,very spicy, weird because I prefer mild not hot.

    So tonight is London broil, simple to make, and the stuffed potato s are bolivian style with cheese and seasoning stuffed,and the rice is Italian brand stirred fried in olive oil and put to simmer

    Hi Dreaming.

    I was also the beneficiary of next door neighbors that knew about cooking. They had retired from being restaurant chefs and were very gracious about answering my questions. While attending university, it seems like I was always walking next door to ask them cooking questions.

    Dreaming, your history and love of cooking are delightful. Cooking often stresses me, even though I love to do it. Seems like everything stresses me these days—I'm wound a little tightly with all the crap going on here.

    Tonight I made our favorite socca bbq chicken 'za with slaw side. Leftovers tomorrow.

    Greetings from northern MN, where the mosquitoes seem to be thriving. But Yay, no evidence of mice in the 5th wheel camper! Dinner last night was half a salami and cheese sandwich, which I could have skipped since we had a substantial lunch, a California burger and tator tots for me.

    Welcome, Dreaming. You have an interesting background and we look forward to your sharing your meals.

    It rained all night and the patter of rain on the camper roof was soothing. Today I will make my first trip to town for groceries and will probably need to take out a loan considering the increased cost of almost all food.

    The only memorable meal on the road was dinner on Monday night at a Green Mill restaurant in Albert Lea, where we stayed overnight. I had a wonderful margarita and then a walleye sandwich. The fish fillet was very large, too large to eat as sandwich filling. It was mild and delicious, Canadian walleye since walleye is not a commercial fish in MN. Only the native Indian tribes are allowed to sell it.

    Hi all! I have been everywhere but here, it seems. Doing ok, just have been super busy with new floor install, new office furniture delivery, got a new computer - finally, driving my carless friend to a training daily, helping another friend unpack after an out of town move, getting ready to sell our downtown house (the one DD has been renting back from us), and then caught a stomach virus helping the friend unpack. Meals have been haphazard, and for sustenance only. I have been eating a lot of nothing due to the stomach thing… have finally recovered, thank goodness.

    Anyway, I am back! Yay! Have been reading about all of your meals, viewing illimae's food porn, and am happy to see all of your familiar names on the newly updated site.

    Special -so glad to see you. I was getting worried. So where will DD live now?

    Carole - glad you're landed safely. Take your time to settle in for the summer.

    Dreaming - welcome. I too will look forward to your recipes.

    Too involved in getting the subdivision pool open for the summer to post. At least we found a water aerobics teacher for 1 day a week. Wish we could cover the other two days, but I am NOT going to take over.

    Cold salad tonight. Maybe crackers if I have enough energy to open the box.

    We were supposed to go to Foxy's last night with three neighbors for wings night but I was tired and not in the mood for eating out. During the day I made a pot of chili. Made a tossed salad to go with it.

    It was good weather for chili since the temperature was in the 50's and 60's and I wore jeans and a long sleeve shirt plus a sweat shirt cardigan to go to Walmart's for the first grocery run. We're running the heat pump this morning but by Sunday will have to resort to a/c.

    minus - DD's boyfriend had been living with her and had his house rented. The lease was up for his tenants, so the timing was good for them to move over to his house. It is larger and has a two-car garage, so better for them anyway - and also in a more suburban setting, safer than downtown. This allows us to sell that house and be free of that mortgage so that we can concentrate on building the CO mountain house. Inventory is scarce here so we are expecting it to sell fast - keeping my fingers crossed! We do need to do some things first - the chickens have wreaked havoc in the backyard, we need to patch and paint some areas inside where there were curtain rods, replace damaged mini blinds with 2" slat shades, some minor landscape, we need to do a minor flooring repair (who puts laminate with a glue component in a wet area?), and install a vanity in the primary bathroom. When the previous owner flipped this house they did a pedestal sink which has no storage - unfortunately they wall mounted the faucet so I have to get a vanity with no top, get a remnant of quartz or granite and have it fabricated for an undermount sink with no faucet holes. I don't really want to start any of this while they are in the process of moving out, but then we need to get it done quickly and listed for sale.

    Dinner last night was pulled pork over brown rice and topped with peppers, onions, and mozzarella for DH. I had a baked potato. My stomach is still iffy, and I had a salad earlier in the day - and I wasn't sure how that was going to sit.

    Today's project is finding a costume for DD to wear to her friend's 30th birthday party in Boston this weekend. Everyone is supposed to dress as an "old person" and they are doing a scavenger hunt and pub crawl. DH is going too (DD's friend is like our second daughter) as a surprise. We put together a costume for DH out of his closet, which is funny - apparently, he has some old man clothes. Plaid sport coat, shirt with exaggerated collar, bow tie, pleated AND cuffed pants, penny loafers with white tube socks, glasses. His hair is already gray, so that helps, lol! He put all of this on and looks like a nutty professor. DD is wearing a dress, a gray wig, pearls, a pin with cats, a cardigan, flats with knee high stockings, and carrying a tapestry handbag and a cane. I am staying home to babysit the tiny kitten she rescued which needed surgery last week. My work is never done, ha! They will have fun and hopefully take a bunch of photos.

    I need to learn to separate the pulled pork into smaller portions to freeze when DH cooks it in the smoker - I thawed it all so he will be eating it again tonight, but I am thinking classic pulled pork sandwiches with garlic fries and baked beans with bacon and pineapple. I will make some of the thin vinegar-based NC style BBQ sauce.

    Carole, I made your pork and brown rice tomato dish but used chicken thighs. I loved it and it was a huge hit with DH! A healthier version of the boxed spanish rice that he loves.

    Last night was bean nachos (I had homemade red beans to use up). Tonight will be lamb…debated between Irish stew or lamb curry. DH gets to pick.

    Spent a few hours in the emergency again (what the ef!?!)…ocular migraine…nothing to see there except for the panic/blood pressure spike. I swear I am breaking down from all my stress.

    Carole, enjoy your camping summer home! I'm jelly. We used to go camping, but my DH hated it, only did it for me. We had a toy hauler, so we could take our quads, always to Moab UT, as it's so beautiful and we have friends there. He preferred "glamping" as he called it, at the Hilton!

    Dinner last night was spicy, peached glazed pork chops, glaze made from Jam I did with some CO peaches I had gotten in UT, rice and broccoli. Tonight the same, except with some beans/onions/mushrooms/garlic sauteed in butter.

    Goldie - my ex-DH hated camping too. We once or twice slept on a ski boat in the lake in the Texas Hill Country. We once slept in the back of our 4 wheel drive truck in Colorado. But NEVER in a tent. His idea of camping was even a step up from yours. Had to be Hyatt quality with a mint on the pillow and a restaurant on site for breakfast.

    Carole - glad you are safely at your summer place.

    9pm and I haven't approached dinner yet. I was handling pool registration for our subdivision. I did prepare a salad this afternoon and was going to add avocado at the last minute. Guess I'd better at least eat the greens since I have to do registration again in the morning from 9-11. Luckily there's a covered patio since it's 92 in the SHADE. Also a nice breeze and the mosquitoes aren't too bad.

    Aussie, that looks lovely. I ended up making lamb curry with potatoes and peas. Leftovers tonight.

    I have never had a migraine and there's no pain involved, just the odd vision…who knows. I suspect stress does crazy stuff to us, LOL.

    Goldie, I assume you meant DEstress, LOL. I do not need more distress, LOL.

    Minus, my DH didn't like the water and would never have slept in the back of anything! Of course I didn't know him when we were real young, didn't get together until I was 40. He realized how much I liked camping and went and bought all kinds of camping gear, and I don't mean just the specifics. He got 2 tents, blow up beds, shower, outside toilet, etc. We went once!

    WallyCat, my DH didn't call me Scarecrow for no reason! Yes, DEstress!

    Aussie, I don't know what rogan josh is, kind of looks like a beef stew, but with lamb? But sure looks yummy!

    Hoping to have a T-bone, shrimp cocktail, baked potato and either a salad or brocolli. Been busy messing with my garden the last few days, planting and replacing some of my irrigation. I have tomatoes, green beans, lima beans, watermelon, cantelope, zucchini and squash. The gnats are horrible, hate those little buggers, you can't feel them when they bite, but they are like mosquitos, but not only do the itch, they weep and scab after you scratch them.

    Wishing everyone a great holiday weekend and thanks to any that have/do serve or have family members that do or did.

    I also wish everyone a good holiday weekend. I will be staying home - except for more subdivision pool registrations. I really don't like to fight the traffic on holidays.

    One of the home owners brought a dozen glazed donuts up where we were doing registrations this morning. I can't even remember the last time I had a donut. They were bakery donuts & if I'm going to eat glazed - I prefer Shipleys. My favorite is still a blueberry cake donut. Still - it was a nice gesture & they were free. Last night I took a salmon steak out of the freezer. I think I'll poach it with dill. I bought a pack of Bob Evans "Mashed Cauliflower with garlic & herbs" to try since they were on sale. Their mashed potatoes are pretty good so I'll report back.

    HI Special. Good to see you back on here and good that you're feeling better.

    We had guests the night before last and we had Spanish rice, Enchiladas, bread and fruit salad. We've been eating the leftovers and also spaghetti.

    Sharon loved car camping, backpacking and hiking, as did I, so…lots of tents and stuff for us.

    Carole…how are the mosquitoes? We were in northern Minnesota (car camping) a few summers ago and the mosquitos were hungry.

    I had to look up ocular migraine as I've not heard of that before. The vision disturbances seem weird.

    Hi Goldie. We are doing the same…staying home where it's not so crowded. :-) I haven't noticed the gnats yet, but I'm sure they are on the way here.

    Our dog is making it very obvious we are late getting out for his evening walk, so off we go.

    Dh and I camped for years. It was a terrific inexpensive vacation the first years of our marriage. We had a favorite lake campsite we went to an hour from home. Family and friends often visited or camped at the same time. We had a tent for years. Then one time a friend loaned us a pop up camper and I told dh, “I’m never sleeping on the ground again.” We bought our own pop up and then eventually a small trailer and kept it at the lake. It was great when ds was growing up. We swam, fished, hiked, biked and did all manner of other fun outdoor activities like catching salamanders in the creek and making camp pies on the campfire at night. Once ds was in high school and busy with other things, we sold the trailer. I was ready for different adventures.

    The lake where we camped has turned into glamping. Where it once was rustic and nature-y, they’ve cut out large sections of trees for more campsites, paved the lots and the new thing is who has the most blinged-out, souped-up golf cart (which no one used when we camped). Not the same. Glad we had the kind of outdoor experience we did back in the day.

    Minus, I once worked at a donut shop for two years. We made the best blueberry cake donuts! Still one of my favorites.

    Dh will make wings on the grill today. The first of the romaine lettuce in the garden is ready so I’ll make romaine and broccoli salad and baked beans. Bought a Marie Callendar pecan pie to bake. Never tried this one before but am in the mood for it. I do love pecans.

    We never did tent camping but I always enjoyed watching the tent campers in rv parks. We started out with a 24 ft. camper and kept going bigger until we bought this 38 ft. monster with three slides. We pulled it with a 1 ton pickup truck. The down side is having to rent sites in big rig rv parks. Many of the older picturesque state parks cannot accommodate big rvs. DH misses taking the rv on the road but the long road trips involve a certain amount of stress. Definitely not for you, Wally!

    We had our first farmers market yesterday. There were lots of people and we did well. The weather was lovely but a bit breezy.

    Last night's dinner was delicious and easy. A big ribeye and baked potatoes on the grill.

    Tonight is a potluck. I plan to make a coleslaw with cabbage and carrots.

    Goldie Rogan Josh is a curry. Just a Patak's curry sauce out of a jar, nice and easy.

    I've had more of an appetite lately and been eating a lot more. I had a bad flu a few weeks ago, before I could get the flu needle and hardly ate.

    It's been cold and wet here, winter starts June 1st.

    Last night was a can o soup for dh; peanuts and hagaan daz for me. If I told you I had another trip to the emergency (which I did)…ugh. Can't even write about it…maybe later or on another thread. I'm seriously getting sick of this. No real health care during holiday weekends, so it goes.

    It's seeming a lot like Christmas.

    Now that the garage is finished, we are moving stuff from the self-storage units to the garage, and then to the house. Opening each box is like opening a Christmas present. :-)

    Sorry about the holiday medical emergency, Wally. You're right about no medical care during holidays.

    Merry Christmas, Eric! You asked about the mosquito situation. They are present and fierce little critters. We will be fogging. Not "we," but "they," meaning men strong enough to strap the machine on their backs.

    Last night's potluck was typical midwestern fare. Buns, pulled pork, "barbecue" (ground beef cooked with seasoning but not with tomato sauce, like our sloppy joes), potato salad, pasta salad, coleslaw. No dessert. Not a full crowd because graduations are keeping some people at home.

    Tonight we're having some potluck leftovers along with hot dogs minus buns.

    Yesterday’s wings were tasty. We havrn’t had them since last year. Dh used McCormack’s Barbecue seasoning as a dry rub on some of them and we both liked it a lot. Sweet Baby Ray’s on the others. The pecan pie was good by oooh my gosh was it ever rich! Leftovers today.

    LOL, Eric, I like that…sooner than sooner. I'm having waaay too much stress/anxiety…or I should say I am reacting with too much stress/anxiety to what is happening here. Ridiculous high BP and usually low-normal. So we are trying an ARB since they are also recently being used for anxiety and hopefully my bp won't go too low. That has been the issue…no one wants to RX a med when I read low-normal at home but I may have to risk low blood pressure to see if anything helps with the anxiety/stress.

    I made a corn polenta with greens and cheese last night; leftovers tonight.

    Bone in chicken thighs (skin removed), doused with salsa, cooking in small slow cooker. A version of salsa chicken. Brown rice steaming on the stovetop. Side will be large tossed salad.

    On the trip here, I ate Cheerios and discovered that it's a cereal I like, in addition to Wheaties, which is very pricey. I bought a store brand that is as good as the brand name and does not get soggy in the milk. I had stopped eating dry cereal because I would get hungry in an hour and a half but it's so easy and I seem to be holding out longer before reaching the starvation stage.

    When I ate boxed cereal, I used to love Special K with milk. Ah, the memories…that was in my 20s. Breakfast now is all over the map…savory, or leftovers from the night before, or oatmeal soaked in soymilk with berries (eaten cold). I soak it overnight. SO easy.
