    I really look forward to ham on Easter, turkey at Thanksgiving & prime rib for Christmas.



    This year my niece is hosting Easter for the first time. My great nephew turns one on Easter, so an Easter/birthday combo - just like duckyb1.. The hostess does ham & we potluck the rest, deviled eggs, au gratin potatoes, asparagus, strawberries with different dipping sauces (chocolate, sour cream, whipped cream), & cheesecake.



    My favorite asparagus recipe is roasted asparagus with balsamic browned butter.

    Preheat oven to 400 degrees. Toss asparagus with olive oil or spray with cooking spray, sprinkle with salt & pepper and arrange in a single layer on a baking sheet. Bake at 400 for about 12 minutes or till tender.



    Melt 2 tablespoons butter in a small skillet & heat till lightly browned, shaking pan occasionally. (don't burn!). Remove from heat; stir in 2 teaspoons soy sauce & 1 teas. balsamic vinegar. Drizzle over asparagus & serve immediately. I double or triple the sauce because it is so yummy!



    We always have family egg hunt; first the dads/uncles hide eggs for the 'kids' (some aren't kids anymore, but they still seem to enjoy the hunt!), then the kids hide eggs for the adults. The little kids get a head start & some eggs are barely hidden while others are really hard to find. The guys have a blast trying to outsmart the 'kids' (33, 31, 30, 23, 17, &6 plus assorted friends) and then the kids have fun getting revenge on the guys. We've done this since the 'kids' were little, so a great tradition.

    You can also make bacon-wrapped dates by stuffing them with an almond and a chunk of blue cheese!  Yum!

    Ok, I have a few good appetizer recipes.  The first one, just search  "Endive Spears with Stilton" on the Food Network site.  This one is good, as well as having a pretty presentation. 

    This one is a spread to serve with crackers:  Basil, Roasted Red Pepper Spread

    1/4 cup roasted red peppers, chopped, 1/4 cup chopped black olives, 1 tub (12oz.) cream cheese, 1/4 cup lightly packed basil, 1 clove garlic, 2 Tbsp sliced, toasted almonds

    Process cream cheese, basil and garlic until smooth.  Wash out cream cheese tub, spray with Pam, line with plastic wrap w/ ends extending over side.  Spoon 1/2 cup cream cheese mixture into tub.  Top with olive and roasted red pepper mixture and remaining cream cheese mixture.  Press firmly.  Chill at least 1 hour.  Garnish w/ basil leaf.  Serve with crackers.

    Pepperoni Roll-ups

    1 pkg (8oz.) cream cheese, softened, 1 cup shredded cheddar, 1/2 cup shopped black olives, 2 tsp oregano, 2 Tbsp sliced scallions, 1/2 tsp garlic powder, 4 (10 inch) flour tortillas, 1 pkg (3 1/2 oz) sliced pepperoni

    In med bowl, combine cream cheese, olives, cheddar, oregano, onion and garlic powder.  Place 1/2 cup cheese mixture on each tortilla and spread.  Place pepperoni on each tortilla, covering entire area.  Roll up tightly (jelly roll style) and wrap in plastic wrap.  Chill several hours.  Cut into slices.

    Asparagus with Wasabi-Mayonaise Dip  (also from Food Network site)  This one is really easy and good.

    Here is the Carrot Cake recipe:

    2 cups sugar, 1 1/2 cup vegetable oil, 4 eggs, 2 cups flour, 2 tsp baking powder, 2 tsp baking soda, 2 tsp cinnamon, 4 jars baby food carrots, 1 cup chopped walnuts

    Mix sugar, oil and eggs.  Add dry ingredients, mix well and add carrots and walnuts.  Bake 350 degrees for 1 hour in bundt pan.   Cool and frost with Cream Cheese Icing:  2 (8 oz) pkgs cream cheese, softened, 1/2 cup butter, softened, 2 cups sifted confectioner's sugar, 1 tsp vanilla

    Cream together cream cheese and butter until smooth.  Mix in vanilla, then gradually stir in confectioner's suger.

    Ducky- Early I know, but Happy Birthday this easter- Wow can I come to your house the food sounds great, Pinapple stuffing?? Never heard of it but sounds wonderful.

    Treesprite- Your asperagus sounds really good I love the flavor of browned butter on veggies will have to try it with the balsamic vinegar. I miss the easter egg hunts with kids and family, this year is just grown up friends no kids :(

    Sherrill- Thank-you for the carrot cake recipe cant wait to try it- Cant wait to try the pepperoni rollups i love to smear cream cheese on salami or pepperoni so i know i will love this.

    Besides my bourbon ham, Im also making broccoli cheese casserole (it was my moms) and so good also sweet potatoes with marshmellows homemade applesauce, garlic mashed potatoes antipasta salad, parker rolls, and pumpkin cheesecake and husbands favorite coconut cream pie I feel like i gained 10 pds writng this, lol!

    Pineapple Stuffing (for anyone interested, so simple a monkey can do it)

    Pineapple Stuffing....(double recipe......1/2 for single (this is the double)

    2 sticks butter

    2cups sugar

    8 eggs

    10 slices bread (cubed)

    2 ..1lb cans crushed pineapple

    Mix and beat, butter, add sugar and beat, add eggs, remove from mixer....add 2 cans pineapple

    Fold cubed bread into the wet ingredients.

    Grease a pyrex dish....9 x 13 for double........Bake 350....1 hour.   Uncovered

    Can also use 2 smaller baking dishes if desired.

    tonight is spaghetti pie and salad. 

    I love all the good Easter traditions everyone has for food! 

    I keep trying to rack my brain for appetizer recipes, the only one that isn't kind of dippy is garlic bread with pesto and chicken.

    Take nice long sub rolls or a thin italian loaf and slice in half.  Spread garlic butter on bread and then spread pesto over it.  Before hand, in the oven cook some boneless chicken breast in oil, salt, pepper a littlle basil and what ever else sounds good.  Cut into thin strips when cooled and top on the bread , top with mozzarella cheese and bake until cheese is bubbly.  Cut into smaller wedges for appetizers.

    I LOVE this and don't make it often enough.

    Tonight I am making a spinach, bacon and onion quiche..  I love making quiche, because I'll have it for lunch tomorrow!

    Sherrill- Your quiche sounds great, wish I could put spinach in mine, and mushrooms too!  I seem to be limited to ham and cheese and bacon and cheese.  :(

    The chicken pesto garlic bread is a recipe from when I worked in a restaurant years ago.  It was one of my favorite things on the menu.  Thankfully I paid attention and learned how to make it!

    tougherthanithought: I love quiche but I have never had any luck making it - what is your secret? Mine never seems to set up. Quiche would be good for Easter brunch.

    treespirit-  Quiche is fast and easy!  My recipe is 4 eggs beaten, one cup of milk, 2 cups of cheddar cheese and what ever else you want, for ingredients.  I buy a store bought pie crust and pour it in.  Bake at 425 for 20 minutes reduce heat to 325 and bake for 25 minutes.  Perfect every time!  Let me tell you- I make a lot of quiche!

    I may have to try fish tacos next week, kids be damned!  I know there are some great recipes on here for them- I'll have to scroll back.  But- if anyone wants to remind me who posted them that would be great. so I can pick out the person!

    Treesprite, my quiche recipe is similar to Lauries.  I just sauted onion, garlic, bacon and fresh, chopped spinach, put it in ready made pie crust, added the 4 eggs wisked w/ 1 cup milk, salt/pepper and some shredded swiss and cheddar.   Bake 15 min at 375.  Sprinkle more cheddar and bake an additional 35-40 minutes.  Comes out great!  I change up the ingredients sometimes (spinach, bacon, feta cheese, sun-dried tomatoes)

    Laurie, I posted easy fish tacos a while back.  I basically rub olive oil on tilapia, sprinkle with blackened seasoning and cook in pan.  Filling was diced avocado with lime juice, cilantro and a shake of tobasco, shredded lettuce, salsa, greek yogurt, chopped grape tomatoes, and shredded cheddar.  Served in warmed corn tortillas.  Very easy and good!

    There are a few other fish taco recipes on here that look good.  The last time I made mine, I tried Michelle's sauce, which was delicious!

    Tonight is leftovers... We still have stuffed peppers and spaghetti and meatballs! Have to work on getting the refrigerator cleaned out before I make anything else!

    Still haven't decided what to have for Easter but, did buy a ham today because they were so inexpensive.  It's good until June so we have plenty of time to make it!  We just had ham two weeks ago when my in-laws were here and I'm just thinking I have a ham bone (for soup) and some extra ham frozen already so not sure we need more just yet!

    I am leaning toward a beef rib roast but, may go with a Greek-style leg of lamb! 

    Although, now that I've thought about it, while turkey doesn't really scream Easter to me, my Mom made a soup the day after Thanksgiving using the bones and leftover vegetables, gravy, etc.  It was called Thanksgiving soup and you put a scoop of leftover stuffing in the middle of your bowl (kind of like a big dumpling) and ladled the soup over it!  It was surprisingly good!  I could sure go for some of that soup!

    I'm still all over the place!! The ONLY thing I have decided is that there WILL be dessert!! Tomorrow is decision day!

    I think our Easter dinner will be prepared by someone else.  It's just hubby, my mom and me.  She eats like a bird, so we'll probably just find a local place and take her out.  Too bad our weather is so crummy - more like early March than late April.  It would be nice to have a little cookout.  But it's supposed to be upper 50's and rain, so that's not gonna happen.

    Seaside - I love the idea for Thanksgiving soup...I need to remember that one. 

    Well, time to head off to bed.  I have a date with Sir Valium...LOL.  Just 1/2 these days, but it ensures a good night's sleep without muscle spasms from the TEs.

    French toast casserole- I'm making this easter sunday for breakfast, I have made it several times and love it- I leave out the corn surup and dont use as much butter as called for, It also dosn't need the maple surup unless you like the xtra sweetness. This is paula deens french toast casserole with maple surup you can watch a video of her making it on the foodnetwork channel

    • 1 loaf French bread (13 to 16 ounces)
    • 8 large eggs
    • 2 cups half-and-half
    • 1 cup milk
    • 2 tablespoons granulated sugar
    • 1 teaspoon vanilla extract
    • 1/4 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • Dash salt
    • Praline Topping, recipe follows
    • Maple syrup

    Directions

    Slice French bread into 20 slices, 1-inch each. (Use any extra bread for garlic toast or bread crumbs). Arrange slices in a generously buttered 9 by 13-inch flat baking dish in 2 rows, overlapping the slices. In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight.

    The next day, preheat oven to 350 degrees F.

    Spread Praline Topping evenly over the bread and bake for 40 minutes, until puffed and lightly golden. Serve with maple syrup.

    Praline Topping:

    • 1/2 pound (2 sticks) butter
    • 1 cup packed light brown sugar
    • 1 cup chopped pecans
    • 2 tablespoons light corn syrup
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon ground nutmeg

    Combine all ingredients in a medium bowl and blend well. Makes enough for Baked French Toast Casserole.

    Yes, Lago, this thread DID derail toward fattening recipes!  I think it is because around the holidays, many people like to make comfort foods, and we all are talking about desserts and other things we are making!  You're right, though...if we all ate this way all the time, we would find ourselves on the "Trying to lose weight" thread!

    ps:  I'm still making my deliciously caloric Carrot Cake for Easter, and I don't feel bad about it :)

    You don't have to bake the crust before you put the filling in, but if you prefer it a little more "done", you can pre-bake it for a few minutes before you add filling.

    Just finished dinner, two thumbs up Debbie.  It will be a repeat in our house.  Love how the garlic crusted onto the chicken.  I didn't add the sauce to the boys portion and they liked it.  Yay!

    Lago... I think the spirit of this thread was meant to share just whatever we are having for dinner.. Be it a fabulous 5 course meal or a PB&J eaten over the sink....lol    Sent the pics of the "Peepshi" to my daughter... She loved it!

    Although, I think that requests for different types of dishes  would be a great idea as well!

    I think we'll get back in the swing of things after this weekend but, I, for one, love seeing all the recipes (not just the healthy ones) and getting just a glimpse into what others are cooking but then I do look though cookbooks as though they were novels and, even if I never make a single recipe, it is a form of entertainment... In the interest of full disclosure... I AM over on the weight loss thread...Embarassed   Although I think that is more from quitting smoking than this thread!

    Tonight is Barefoot Contessa's (Food Network) Greek Panzanella Salad and Pesto Pizza with Artichoke and Black Olives....  Vampires need not come calling tonight!

    Lago- I agree with you, I am ready to get back into summer food and eating healthier.  I seem to still be cooking bad for you food with a lot of rain and cold temps here in the Northeast.  I am ready to start grilling out again and eating double veggies and no carbs.  Once the weather turns my  menu should too.

    I do agree with Seaside though, I started this thread so even if you were eating grilled cheese for dinner you should feel welcome to speak out and tell us.  I love a good grilled cheese!  Sometimes it is the simple things that we enjoy, or the unhealthy things, yet hopefully we will all get in the swing of things and break out those yummy and healthy summer recipes!

    Yesterday I had dual core needle biopsies (original tumor woke up, and we'd found a new tumor on my other breast), so talk about not being in the mood to cook, huh? My Pack Rat took me out for dinner last night and I don't even remember what I ate...umm, other than the four or more Ativans plus Tramadols plus a couple of Oxycodones too.... today -- canned chicken teriyaki over rice. 

    :-P

    And I still feel like crap, so tomorrow I'm sure I'll be staying simple on the food front too.

    O2bhealthy, you won't tell on me if I join in here will you?  Tonight DH and I went to a winery to visit friends, we are staying in the guest house so we had them over for dinner.  lamb chops with rosemary rub, hasselback potatoes and green beans almondine.  A simple dinner accompanied by some of the best Syrah...  It is so much more fun to cook for other people.

    Thanks!  I forgot to weigh at all today.  Oh well, I enjoyed my dinner!  I am being pretty good about how much I drank today.  Tomorrow our friend is going to let us do barrel tasting. I will just have to walk a little bit faster to burn the extra calories.

    Meece- Your dinner sounds really good I love green bean almondine. I drank toooo much wine last night mine was merlot (feeling it today) uggh!!

    Wasnt sure what I was having for lunch today untill grilled cheese was mentioned, I put some whole green ortega chili's inside the bread with the cheese too yum!!!!

    I have so much cooking to do today so I better get started- Happy Easter everyone!
